Portobello Mushroom Burger
Ingredients
Mushrooms
- 4 Portobello Mushrooms wiped clean
- 1/2 teaspoon salt and pepper
- 2 Tablespoon s olive oil
- 1/2 cup cheddar cheese shredded, use more or less. Use your favorite cheese
Marinade (optional)
- 2 teaspoons balsamic vinegar
- 2 cloves garlic minced
- 1-2 tabelspoons thyme fresh or 1 teaspoon dried
Assembling
- 4 burger buns
- 1/3 cup Spicy Mayo Homemade Recipe here.
- 1 cup Arugula
- 1 onion sliced
- 2 tomatoes thinly sliced
Instructions

Start by wiping off any dirt you see on the portobello mushroom using a damp kitchen towel. Then season the mushrooms on both sides with salt, pepper and olive oil. You can add a teaspoon of balsamic vinegar and 2 cloves of minced garlic along with fresh thyme. Otherwise keep it simple and basic.

Preheat a BBG grill or indoor grill on medium high heat.

Add in the seasoned mushrooms, tops side down.

Grill for 5-6 minutes and flip.

Continue cooking for another 5 minutes until the mushrooms have softened.

Add some cheddar cheese on top of the mushrooms and turn off the heat. Cover the grill for 1-2 minutes until the cheese has melted.

Assemble the Burgers

Brush your burger bun generously with Spicy Mayo sauce on the tops and bottom.

Layer your burger toppings. We used Arugula, sliced onions and tomatoes.

Add the mushroom with the melted cheese on top.

Place the top burger bun and it's ready!

Best Tips for Mushroom Burgers
- Buy fresh Portobello mushrooms that don't look wilted or scratched.
- It's best if you wipe them down with a wet kitchen towel or paper instead of washing mushrooms in water.
- You can opt for a simple seasoning of salt, pepper and olive oil for this recipe. However you can elevate it with simply 2 cloves of garlic, 2 tablespoons balsamic vinegar and some fresh thyme.Â
- Use an outdoor or indoor grill for this recipe, both work equally great.
- Cook the mushrooms for just 5-6 minutes per side until slightly softened.Â
- Use your favorite sauces for the buns: Spicy Mayo, Garlic Parmesan Sauce, Blue Cheese Dressing or Nacho Cheese Sauce.

What to Serve with Portobello Mushroom Burgers?
What can go better with burgers other than some good old Air Fryer Frozen French Fries or Air Fryer Sweet Potato Fries? A simple Wedge Salad, Caprese Salad, Avocado Orange Salad with Citrus Dressing can't go wrong.Â
Something like my grandpa's Pan Fried Potatoes with spicy garlic and herbs would be phenomenal too. Or a light Fish Taco Slaw for crunch! A bright Peach Burrata Salad would be super refreshing!
Is Portobello Mushroom burger Healthy?
It's lighter than beef or lamb, and mushrooms are loaded with health benefits for sure. To make this burger even lighter, try the lettuce wrap instead of a bun.
What Can you Add to the burgers?
SO MUCH! Something like fried eggs would make it a brunch favorite! Spinach, kale, any greens. Basil Pesto and some Burrata Cheese for a lavish burger. Sun Dried Tomato Pesto, Greek Salad Dressing and feta, or try Pizza Sauce and mozzarella!
How to Store Leftovers?
It's best to assemble the burgers right before serving. Leftover cooked mushrooms are great for use in any other recipe on their own. Cooked mushrooms can be stored in the fridge for upto 4 days. However assembled burgers are best eaten the same day.Â
To reheat cooked portobello mushrooms, we love to use the air fryer at 350 degrees for 3 minutes.Â
If you're freezing the cooked mushrooms, you can individually wrap them and freeze for 2 months. reheat the same as above once thawed.
