So today, we’re tackling crab, and we’re making them 4 ways so you can pick your favorite way and cook them at home!

What Are Crab Legs?

Crab legs are one of the most luxurious and satisfying seafood meals you can make at home. Whether you’re cooking king crab, snow crab, or Dungeness crab, the key to success is surprisingly simple. Most crab legs are already fully cooked when you buy them, so the goal is to gently reheat them without drying out the delicate meat.

When reheated properly, crab legs become sweet, buttery, and incredibly tender. The method you choose:  steaming, baking, grilling, or air frying determines the flavor and texture you achieve.

Crab legs are the long leg sections of large crab species, most commonly King crab, Snow crab or Dungeness crab.

Most crab legs sold in grocery stores are pre-cooked and flash frozen immediately after harvest, which preserves their flavor and texture.

Because they’re already cooked, preparing crab legs is really about reheating them gently while preserving their natural sweetness and moisture.

This complete guide explains everything you need to know about cooking crab legs, including the best techniques, cooking times, pro tips, and common mistakes to avoid.

Expert Level Crab Cooking Principles

1. Most Crab Legs Are Pre Cooked, Here’s How to Buy Crab Legs

Almost all commercially sold king, snow, and Dungeness crab legs are fully cooked and flash frozen at sea. You need to know how to:

  • Reheat gently
  • Preserve moisture
  • Avoid overcooking

Overcooking makes crab rubbery and dry.

2. Internal Temperature Target

Since crab legs are pre cooked, aim for:

  • Reheat to 135–145°F
  • Do not exceed 150°F

Above this, muscle fibers tighten and moisture is lost.

3. Frozen vs Thawed

You can cook from frozen. However:

  • Thawed crab reheats more evenly.
  • Frozen requires 2–5 extra minutes depending on method.

Best thaw method:

  • Overnight in refrigerator
  • Or cold running water (not warm)

Why You’ll LOVE 4 Ways to Crab Legs Recipe

  • This recipe works great on all types of crabs, crab clusters, snow crab, crab legs and dugeness crabs.
  • The classic taste of old bay seasoning or cajun and lemon is all you need for the crab meat to shine.
  • You can pick your favorite or most convenient way to making crab legs at home.
  • They’re all fool proof and easy to make at home, so you don’t need to pay a fortune for crabs at restaurants anymore.
  • Each of these cooking methods offers a different texture and slight different tastes.
  • You can use fresh or frozen crab legs for this recipe and they both are GREAT!

Ingredients You’ll Need

A variety of crab legs on a white marble surrounded by a bowl od old bay seasoning, some lemon slices and fresh parsley

  • Crab. Fresh or frozen and any type of crab legs work here. More on that below.
  • Seasoning. A classic old bay or cajun seasoning is BEST, along with extra salt and pepper to taste. You can slo add some chilli flakes as we did, but it’s optional.
  • Oil Spray. This is used particularly with the air fryer method and grill and oven.
  • Lemon. Zest of a lemon for a kick of flavor.

Fresh or Frozen Crab?

While we ALL love to say fresh is best, however unless you live really close to the ocean, it would be hard to source. So frozen crabs work great here as well. Make sure you buys quality crab that doesn’t have ice crystals. Also pick crab that hasn’t traveled a long distance. To use the frozen crabs, just defrost them overnight in the fridge.

Types of Crab Legs

  • King Crab Legs. These are large, meaty crab legs, which often are sold split or whole. They have a rich taste and plenty of crab meat, similar to buying a lobster tail.
  • Snow Crab Legs. While still large, but not as the king size, these are also meaty and great option to cook. These are often pricey but offer a great flavor.
  • Dungeness Crab Legs. We love these for their buttery flavor, however they’re hard to find. They are usually sold in clusters and have a firmer texture.

How to Cook Crab Legs

Here is our go to tutorial for 4 different ways to cooking crab legs, and each is worth a TRY! We won’t say which is our favorite, but feel free to take a guess! 🙂

  1. Thaw the crabs overnight in the refrigerator or run under cold water for 10 minutes Cooking from frozen works but may require 2–3 extra minutes of cooking time.

Method 1: Steamed Crab Legs

A set of crab legs placed in an instant pot steamer with lemon, bay leaf and garlic at the water for steaming

  • Steaming is widely considered the best way to cook crab legs because it keeps the meat moist and prevents it from becoming watery.

Why Steaming Works

Steam reheats the crab gently while preserving its natural sweetness. The classic and most common way is steaming. Set your steamer basket over water that we flavor with garlic, whole peppercorns, butter and lemon. You can use any steamer you have, we have used an instant pot steamer here. Steam for 10-12 minutes.

How Long to Steam Crab Legs

  • Snow Crab: 6-8 mintes
  • King Crab: 5-7 minutes
  • Dungeness: 7-9 minutes

While you can use salted butter and melt it, we love adding some fresh garlic minced, chilli flakes, lemon zest and parsley to it. It makes a wonderful flavored butter for dipping.

Don’t forget to have lemon wedges, as they are the perfect compliment to any seafood.
