These Lasagna Roll Ups make comfort food super easy and gourmet. Today I’m making these lasagna rolls ups in a mug for a romantic dinner for two.

LASAGNA ROLL UPS
Lasagna roll ups are simply sheets of lasagna, stuffed and rolled. As simple as it sounds, it’s in fact so divine!
There are so many ways and things you can stuff your lasagna sheets with, however today we’re keeping it simple. As simple and probably as Italian as can be!
I’ve used a mixture of ricotta, Parmesan and basil pesto for the stuffing. If you’d like to add veggies, I would probably say sautéed spinach and mushrooms are your best bet.
Once the lasagna roll ups are stuffed, they’re rolled up and placed in a rosa sauce. Plus to add an extra layer of flavor, I topped them with the same rosa sauce. The sauce is PURE Tuscan love.
ROSA SAUCE
There’s nothing like a good pasta sauce. Nothing. Not only because we love pasta. But because a good sauce adds plenty of flavor with zero effort!
I’ve used two Bertolli Sauces today. The Bertolli® Traditional Marinara with Italian Herbs and Fresh Garlic and the Bertolli® Alfredo With Aged Parmesan Cheese.
It’s like bringing a taste of Tuscany to my home. Out of all the pasta sauces, Bertolli is the only Tuscan sauce cooked lightly with olive oil creating layers of fresh flavor.
How to Make Rosa Sauce? Super Simple, you’ll need to mix two parts Bertolli® Traditional Marinara with Italian Herbs and Fresh Garlic to one part Bertolli® Alfredo With Aged Parmesan Cheese.

Let’s make the lasagna rolls ups step by step together.
LASAGNA ROLL UPS RECIPE
Start off by gathering your ingredients. Bertolli Sauces, Mozzarella cheese and cooked lasagna sheets (if using fresh lasagna, don’t cook the sheets).
The filing is ricotta, parmesan cheese, basil pesto and seasoning. Mix all of that together in a bowl.
Use a teaspoon to spread the filling along the lasagna sheets.
Roll Each sheet until it looks like a tube.
Since we’re cooking for two this Valentine’s Day, I’ve cooked my lasagna roll ups in a mug.
You can opt for a a deep oven safe casserole if you’re making this recipe for a crowd or potluck.
The beginning of magic starts now, layer the bottom of the mug with the Bertolli Marinara sauce.
Now add in the Alfredo Sauce to create the Rosa sauce.
Use a spoon to swirl them together. YUM!
Add the mozzarella cheese over the sauce, and don’t mix it in. The cheese acts a glue here to bind the lasagna and sauce.
Add the lasagna rolls over the rosa sauce. For a large soup mug like mine, I use three roll ups per mug.
Top the rolls with another layer of Marinara sauce and Alfredo sauce.
Cover the mugs with foil and off to baking they go.
Once they’re out of the oven, you’ll need to flip them. The best way to do that is to remove the foil and place a plate over the top of the mug.
Then flip/invert the mug on to a plate. Watch as the rosa sauce flows beautifully!
Garnish the lasagna roll ups with chopped fresh garlic and shredded Parmesan cheese.
I love serving these with a side of green or a simple salad. YUM.
LASAGNA TIPS
-Use Fresh Lasagna sheets for a shortcut, otherwise, cook the lasagna sheets ahead of time. You can cook it up to two days in advance.
-Use quality sauces such as Bertolli for quality tasting lasagna. This recipe is all about the sauce.
-If you want to make this recipe a spinach lasagna roll up, add 1/2 cup of sauteed/steamed fresh spinach to the filling.
-If you want to make this recipe for a crowd, use a deep oven safe dish and arrange the lasagna rolls as per the recipe. However if you feel flipping a large dish may be overwhelming (which it is!), then don’t flip it. To do so, avoid the layer of cheese at the bottom of the dish and proceed with the recipe. Once the lasagna is ready, remove the foil, sprinkle a layer of cheese and place the lasagna back in the oven for just 10 minutes. Serve in the dish itself.
-This recipe makes a great potluck dish!

Lasagna Roll Ups For Two
Ingredients
Rosa Sauce
- 1 Jar Bertolli® Traditional Marinara with Italian Herbs and Fresh Garlic
- 1 Jar Bertolli® Alfredo With Aged Parmesan Cheese
Filling:
- 2/3 cup Ricotta cheese
- 1/3 cup Parmesan Cheese
- 2 teaspoons basil pesto
- pinch of salt and pepper
Lasagna Roll Ups:
- 6 sheets of fresh lasagna or cooked dry lasagna
- 1 cup Mozzarella cheese shredded
Garnish
- 2 Tablespoons Fresh basil chopped
- 2 Tablespoons freshly grated Parmesan cheese
Instructions

Preheat the oven to 400 degrees F.

Make the filling by mixing all ingredients in a bowl.

Take a teaspoon and spread the filling over the lasagna sheets, you’ll need about 2 tablespoons of filling per sheet.

Roll the sheets, one at a time into a tube.

In an oven safe soup mug or any deep dish oven plate place the rose sauce at the bottom. You’ll need about 3/4 cup of sauce at the bottom. Use more or less to your taste depending on how saucy you like your lasagna.

Add a layer of mozzarella cheese over the sauce and don’t blend it in.

Now take three rolled up lasagna sheets per mug and place them over the cheese, pressing down.

Top the lasagna with another half a cup of rosa sauce. Cover the top with foil and place the mugs in the oven for 15-20 minutes.

Remove from the oven and remove the foil off.

To serve the lasagna roll ups, you need to invert/flip them to a plate. The best way to do that is to put the plate over the top of the mug and swiftly flip the mug upside down. Watch as the sauce drenches the lasagna 🙂

Serve the lasagna rolls sprinkled with extra parmesan cheese and fresh chopped basil.
