This delicious Fajita Bowl is the perfect Chicken Fajita recipe for those busy days. Quick, easy, vibrant and tasty bowl of chicken fajita, guacamole and salsa on a base of rice or salad or both!
Let’s face it, I’m not Mexican, but I’m a die hard Mexican food lover. I could probably eat fajitas everyday, serve them up endlessly and never complain.
A fajita bowl like this is my go to dinner when I’m rushed, because it comes together in minutes! Another awesome and quick fajita fix is this Sheet Pan Fajitas.
This chicken bowl has been an inspiration from Hello Fresh. Like so many people, I have my days where I just can’t cook. I’m either too tired, too busy or just not up for it.
I love a good meal service like Hello Fresh, and I love their fajita bowl. You can check so many of their recipes to try too. I got intrigued to make their delicious bowl and here it is!
FAJITA BOWL
This is much simpler than making chicken fajitas, even though it’s quite similar.
A fajita bowl has all the flavors of your favorite fajita recipe: chicken fajitas, beef fajitas, vegetarian fajitas or shrimp fajitas. Plus, it’s got all your toppings and favorite add-ons.
Fajita Bowl Ingredients:
- Chicken Breasts (since this is a chicken fajita bowl).
- Fajita spices (more on that below)
- Homemade Salsa (or store bought —but try the homemade first!)
- Guacamole Recipe (again store bought works, but give this a try!)
- Cilantro, scallions, jalapeños, tomatoes for toppings
- Cooked white rice or lettuce for the base, or a combo
- Tortilla or any chips on the side(optional)
Now let’s break down the steps.
CHICKEN FAJITAS or FAJITAS DE POLLO
Fajitas de pollo is when I get fancy and use the Mexican word for chicken fajitas.
First of all, start off with boneless skinless chicken breasts. They cook much faster and slice beautifully for today’s recipe.
If i’m extra rushed like you can probably see, you can slice the chicken breast in half. You’ll get two identical pieces from one chicken breast, and this cooks in just 7-8 minutes over the stove.
You can also make Chicken fajitas in the oven, however I opted for a simpler straightforward recipe today. If you’re using whole chicken breasts, you can definitely add fajita veggies and stick that in the oven.
For this stove top quick version, you’ll start by seasoning the chicken on each side.
Make sure each side is well spiced up. There’s no marinade or waiting here, and this is a dry spice mix so it needs to full coat the chicken.
Use a stove top grill pan or any skillet, add oil and grill the chicken breast for 3-4 minutes on each side, and it’s ready!
Let the chicken rest for a few seconds before clicking them into half an inch strips.

Fajita Spice:
I love using a dry spice when I’m not marinading or grilling my fajita recipe on the BBQ. Here’s what I use:
- Salt
- Pepper
- Oregano
- Cumin
- Chilli Powder (ancho chilli, chipotle chilli, mild or spicy chilli powder—your choice).
- Garlic Powder
- Onion Powder
Now that your chicken is ready, it’s time to assemble and continue with the bowls!
CHICKEN FAJITA BOWL
Here’s where you can get as creative as you can! The toppings, the add-ons and even the base of the bowls are completely up to your taste.
Always start layering the chicken fajita bowl with a sturdy and hearty component. Either cooked rice, I’ve got cilantro cooked rice here. Or tortilla chips. Or a hefty 2 cups of lettuce.
And even more, you can make a base combo of all of these, or just two of them.
You’ll need to flavor up this layer, I use my favorite easy Homemade Salsa here! You just can’t go wrong! It’s made in a food processor, a no cook salsa that’s super tasty—with a secret ingredient!
Now pile over your chicken fajita slices, a hefty dollop of my authentic Guacamole, extra Homemade Salsa, chopped onions, fresh tomatoes, sliced jalapeños and a squirt of lemon juice!

- Liberally season the chicken because they don’t have time to marinate, they will get cooked right away.
- Sear the chicken for 3-4 minutes per side, and flip only after that sear. Le the chicken rest before slicing it.
- Layer the base of the fajita bowl with your favorite ingredient or combo.
- favorite base options are: herbed or plain rice, lettuce, tortilla chips or soft tortilla, or a combo.
- Always flavor that base ingredient with salsa (I recommend this Homemade Salsa) before adding on the remaining ingredients.
- Layer the chicken, a dollop of guacamole, extra salsa, fresh veggies like onions, tomatoes, scallions, jalapenos, cilantro and a squirt of lemon juice!
- If you want to make the chicken bowls in a snap: Have the Homemade Salsa in your fridge and the Guacamole. Also use leftover rice, just add fresh cilantro to it.
- To make this a low carb meal, add plenty of lettuce for the base and skip the rice and chips.
- Leftovers are super delicious for lunch—they are even as delicious eaten cold!

Ingredients
Chicken Fajitas
- 1 Tablespoon oil
- 1 chicken breast cut in half lengthwise
- 1 teaspoon salt
- 1/4 teaspoon cumin
- 1 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1 teaspoon chilli powder
- 1 1/2 teaspoons oregano
- 1/2 teaspoon garlic powder
Fajita Bowl
- 1 1/2 cups Cooked rice or Lettuce or Chips
- 1 cup Homemade Salsa
- 1/2 cup Guacamole
- 1/4 cup chopped onions
- 1 jalapeno sliced
- 1/4 cup diced tomatoes
Instructions

Season the chicken liberally with the spices. Preheat the oil in a skillet over medium high heat. Use a stove top grill pan if you have one. Otherwise, any skillet works.

Sear the chicken breasts for 3-4 minutes per side until it cooks through.

Remove the chicken from the skillet and cover before slicing.

Slice the chicken into half an inch strips.

Assemble the fajita bowl. Add the base to your bowls, choose either rice or salad or chips or tortillas or a combo.

Drizzle some salsa over the base layer, and start assemble the bowls. Add chicken, guacamole, fresh ingredients and finish off with a squirt or lemon and extra salsa!
