Corn Ribs are a super tasty and fun way to enjoy corn season this summer! They are sweet, slightly chewy, packed with flavor, and make for a delicious finger food or appetizer. We love to dip them in a spicy avocado crema and it contrasts the tastes beautifully! Make sure to try this Corn Ribs recipe before the summer ends!

We have been enjoying so much corn this summer, and we seriously couldn’t be happier! It’s so seasonal, plump, sweet, fresh and readily available anywhere. Spicy Corn Fritters are a favorite appetizer that we make so often and Corn Coleslaw Recipe. 

 

All year round we use frozen corn to make our MOIST and super flavorful Cornbread Recipe. Today’s we’re showing you how to make corn ribs recipe from scratch, because seriously it’s much easier than you think!

 

While you can flavor this recipe in so many ways, we love a touch of chilli powder. It pairs so beautifully with the sweetness of the corn, and our dip. We use the same dip we made with this Perfect Baked Potato Wedges with Avocado Crema. The spicy jalapeno, creamy avocado, bright zesty lime and cilantro is just heavenly!

Ingredients You’ll Need

  • Corn. Seasonal fresh sweet summer corn is BEST for this corn ribs recipe. 
  • Chilli Powder. We use this to give the corn a touch of smoky flavor and it pairs so well with our dip. You can simply use salt.
  • Olive oil. To help cook the corn, whether in the air fryer, grill, oven or stove, you’ll need a bit of oil. 

How to Make Corn Ribs Recipe

You’re going to start by preparing the corn, which is the trickiest part. Make sure you have a nice sharpe knife and a cutting board. Absolutely don’t start cutting the corn if you feel it is shaky on the surface. 

How to Cut Corn Ribs

  1. First, you’re going to trim off the edges of the corn. This is essential so that you can have the corn standing up right on the cooking board without moving as you cut it.

  2. Have the corn upright on your cooking board and use a sharp knife to cut it in half. Make sure to keep your finegrs our of the way. Use your other hand to tap on the knife so it can cut smoother.

  3. Lay each half on the cutting board and cut it further into half so you’ll end up with 4 corn ribs from each corn cob.

  4. We love taking the corn ribs and use a sharp knife to peel off some of the hard pats of the cob away from the kernels. This helps with cooking the corn faster and makes it curl up so beautifully. It is completely optional however. 

Season The corn

Once you have all the corn ribs ready, you’re going to season them. You can opt for a simple salt and pepper. We found that using oil is a must to help the ribs cook, any type of oil you’d like works well. So here we have a chilli powder and olive oil combo which is our favorite seasoning.

Cook Corn Ribs

1.Grill

We LOVE the flavor of the grill, and since it’s seasonal, we will absolutely always got for it as a first choice. Just place the seasoned ribs on the grill over medium heat, cook while covered for 5-7 minutes per side. 

2.Oven

Roast in a 400 degree oven for about 15-28 minutes in a single layer over a baking sheet.

3. Air Fryer

Air fry at 400 degrees for about 8-10 minutes, shaking the basket half way.

Tips For Corn Ribs

  1. Fresh seasonal summer corn is the BEST so make sure you try this corn ribs recipe in the summer.
  2. Cutting the corn is the hardest part of this recipe, so make sure you start by trimming it.
  3. Trim it so well that when you have it upright on a cooking board, it doesn’t feel shaky at all. Only then, beging cutting it up.
  4. Use a sharp knife, and use your other hand to tap on the knife for a firmer cut.
  5. Season the ribs with any spice blend you like, or keep it simple with just salt. 
  6. You can use olive oil or avocado oil or any type of oil here, as long as you use oil.
  7. While you can cook corn ribs in the oven, stove top and air fryer, we prefer using the grill. The flavor of grilled corn is our opinion is just unbeatable!
  8. Serve this with any dip you like, or sprinkle some cilantro on top and enjoy right away.
  9. Leftovers reheat so beautifully in the air fryer. Reheat for 3-4 minutes at 350 degrees F and they taste just as fresh.
  10. You’re not supposed to eat the whole corn rib. Its too tough.

Corn Ribs Recipe

Ingredients

Corn

  • 3 fresh whole corn on the cob peeled.
  • 1 tablespoon olive oil
  • 2 1/2 teaspoons chilli powder

Avocado Crema

  • 2/3 cup Greek Yogurt or sour cream
  • 1 large Hass avocado or 2 smaller ones pitted and peeled
  • 1/2 teaspoon salt
  • 1 jalapeno
  • 1 clove garlic
  • Juice of 2 limes
  • 1/4 cup cilantro leaves

Instructions

  1. Trim the base of the whole corn, make sure iit's stable when put upright.

  2. Place the corn with the bigger base at the bottom on a cutting board.

  3. Take a knife and cut along the middle of the con vertically to have two equal halves of corn.

  4. Then cut each half vertically as well into two. You’ll end up with 4 long strips per corn cob.

  5. You can cut each strip into half horizontally creating shorter ribs, or keep them as is.
  6. In a bowl season the corn with chilli powder and olive oil.

  7. Place on a medium low grill, covered and allow the corn to cook until tender while flipping every 4-5 minutes.

  8. The corn will curl up and char, and become softer to eat.
  9. When ready, make sure to remove it into a bowl and cover it with foil or plastic wrap to soften further as you prepare the hot dogs and crema.

  10. For the avocado crema: Add all ingredients in a mini blender or food processor and process until a smooth and creamy dip. You can adjust the thickness by adding more water to loosen up the dip or keep it as is.
