This Mango Pico De Gallo is summer’s favorite salsa or condiment! It works like a zesty sweet spicy flavor booster to all your dishes, and it comes together in less than 5 minutes. We use it endlessly with our tacos, bowls, grilled meats, salads, or just on it’s own with some chips. Make it today!!!

There’s something about making your own condiments and a Homemade Salsa. You have absolutely full control over the sweetness, spice level, tang, and seasoning. So you’re gonna LOVE every bite. This Mango Pico De Gallo is no exception. 
 
It’s the perfect balance of sweet, spice, tang, juicy mangos, a hint of onions, lots of cilantro (we happen to love it!) and some summer sweet cherry tomatoes. It’s been a favorite since we made it with our Salmon Tacos. We’ve been using it in so many other ways, and so today we wanted to share the basics of making it.
 

Why You’ll Love Mango Pico De Gallo

  • It has a round up of flavors combining mangos, onions, tomatoes, jalapeños, lime and cilantro.
  • This is one of those super versatile recipes where you can absolutely play around with the ingredients to your taste.
  • Make it extra sweet by adding more mangos and removing some of the onions. Take off the jalapenos all together is you don’t want that spice kick. Remove the cilantro if it’s not your things and add in parsley instead. If tomatoes are not in season, swap them for pineapple for another bright twist on the salsa. SO MANY different ways to enjoy this! 
  • Depending on your chopping skills, this recipe is ready between 5-10 minutes max.
  • With grill season now, make sure you try this with your grilled chicken, fish, meats and veggies–SO GOOD!
  • If you’re watching your weight, this mango pico is super light, gluten free, vegan and loaded with fruits and veggies.
  • While we love it as a condiment over bowls, grills, tacos etc. This salsa is delicious on its own with some chips. 

Ingredients You’ll Need

  • Mangos. This is the star ingredient. If you can find sweet, juicy mangos where you live, then take full advantage of that for this recipe! However truthfully, any mango works well here since its a savory one.
  • Red Onions. You can completely swap this for scallions if you like a milder onion taste. Likewise, if you love a strong flavor of onions, use yellow onions. 
  • Jalapenos. While these are completely optional, they are HIGHLY recommended! The spice kick along with the sweetness of mangos is out of this world. If you’d like a milder spice note, make sure to remove the seeds form the jalapeño. Or use just a quarter or half of it instead of a full one. 
  • Tomatoes. Sweet cherry tomatoes add a wonderful balance of sweetness and savory note to the pico. 
  • Lime. This is the tang, zest and brightness of the pico, and while we used a decent amount, you can completely go for more or less.
  • Cilantro. We happen to appreciate this herb so much, but if you want to swap it, parsley is the best option. 
  • Garlic. This adds another layer of flavor to the salsa which is so good.
  • Salt. This is the simplest and most basic seasoning you need. While you can add chilli powder, cumin and other spices, we loved just the simple version of salt.

How To Make Mango Pico De Gallo

  1. You’ll need a deep bowl or shallow plate. Add in the veggies and fruits along with the garlic.

  3. Now simply toss it all together.

  4. Tase and adjust the amount of lime and salt to your taste.
  5. Done and Done! Now you’re left to enjoy 🙂 

How To Serve Mango Pico De Gallo

  • With chips like Pita Chips
  • Over Salmon Tacos or Lamb Tacos.
  • Condiment for Fajita Bowl, Salmon Bowl, Grilled Mahi Mahi, Grilled Chicken Wings, Grilled Chicken Breast Skewers.

Tips For Pico Recipe

  1. This is a recipe with simple ingredients so try to use the best you can find. Ripe juicy mangos are preferred along with sweet cherry tomatoes.
  2. If the red onion is too strong for your taste, swap it for scallions. And alternatively if you love the strong pungent onion taste, then go for a yellow onion.
  3. Control the level of spice by removing the seeds entirely from the jalapeño. Or use half, or even a quarter of it instead of a full one. 
  4. Depending on your chopping skills, you can get this recipe in 5 minutes. But you can also use a chopper, especially if your mango is firm. 
  5. Cilantro is a classic flavor with pico recipes, however many people find a soapy taste to it. If you’re one of those, then simply swap it for parsley.
  6. While you can spice it up with cumin and chilli powder, we find that salt is basically enough for the flavors to shine.
  7. The lime is what pops up the salsa, so we add plenty. You can add even more actually there’s room for it, and likewise you can add less if it’s not your thinng.

Variations on Mango Pico

Try adding an avocado, pineapple instead of the tomatoes, or swap the mango for stone fruits like nectarine. 

Can you Make Pico de Gallo in advance?

YES! The best thing about dips and salsas is that the more they sit, the more the flavors blend together. So it’s ideal to make this one day in advance. If you’re making it the day of, then let it sit in the fridge for at least 1 hour before serving for optimal flavor.

What is the difference between pico de gallo and salsa?

While they’re both condiments or sauces if you will, salsa is usually blended. Our Homemade Salsa is made mainly in a food processor. Pico de gallo is usually chopped and never blended. Another major difference is that salsas may often be cooked, or have a few ingredients cooked, while others can remain fresh. Pico however is always made of fresh uncooked ingredients.

Ingredients

  • 1 Mango peeled and finely diced
