Ingredients You’ll Need

  • Fresh salmon fillet. We use skinless fillets, or remove the skin. You can use any type of salmon you prefer, Sockeye Salmon or any type.
  • Bread crumbs or panko breadcrumbs. They help bind the burgers.
  • Dijon mustard. For flavor and for binding the ingredients together
  • Lemon juice & lemon zest. For the brightest flavor of lemon ever we also add a lemon slice cut into bits.
  • Fresh Herbs. Fresh dill and parsley are our all time favorites.
  • Flavoring. Green onions or scallions, garlic and capers.
  • Seasoning. Salt and black pepper, you can also add garlic powder and onion powder, some paprika and chilli flakes.
  • Yogurt. We use Greek yogurt for binding the salmon instead of mayo.
  • Toppings: avocado, lettuce, tomato, onion.

How to Make Salmon Burgers

Prep The Salmon Mixture

  1. Use a sharp knife and coarsely chop the salmon into small pieces. You can alternatively pulse in a food processor keeping the chunky texture.

  2. Add the chopped salmon in a bowl with the remaining ingredients to make the salmon patty. Mix them well until they’re all blended.
  3. Shape into patties by dividing the mixture into 2 equal portions. Shape and press gently so they hold together.

Cook The Burgers

  1. Pan-sear: Heat olive oil in a skillet and cook 3–4 minutes per side.
  2. Grill: Oil grates, then grill patties 3–4 minutes per side. Check out guide for How to Grill Fish without it sticking.

Assemble The Burgers

  1.  Make the burger sauce or lemon aioli. Mix all ingredients together in a bowl until sooth.

  1. Use fresh salmon for the best flavor and texture.
  2. Don’t over-process or finely chop the salmon meat. Leaving small chunks keeps burgers juicy.
  3. Chill patties for 15 minutes before cooking to help them hold shape if the weather is too hot.

  5. If using a pan, add a little bit of oil and pan sear, flipping only twice to minimize the burger falling apart.
  6. Avoid overcooking the salmon.

Salmon Burgers

  • 3 Tablespoons panko breadcrumbs
  • 1 teaspoon mustard dijon mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon capers
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh herbs dill, parsley

Salmon Burger Sauce

  • 1/3 cup Mayonnaise
  • 1 Tablespoon lemon zest `
  • 1/4 teaspoon salt and pepper

  • 2 brioche buns
  • 1 avocado sliced
  • 1/3 red onion sliced
  • 1 tomato sliced
  • 1/4 cup arugula
