Ingredients

Salmon Burgers

  • 2 salmon fillets coarsley chopped
  • 2 scallions minced
  • 1 garlic clove minced
  • 2 Tablespoons Greek Yogurt
  • 3 Tablespoons panko breadcrumbs
  • 1 teaspoon mustard dijon mustard
  • 1 teaspoon lemon zest
  • 1 tablespoon capers
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons fresh herbs dill, parsley

Salmon Burger Sauce

  • 1/3 cup Mayonnaise
  • 1 Tablespoon lemon zest `
  • 1/4 teaspoon salt and pepper

Assemble

  • 2 brioche buns
  • 1 avocado sliced
  • 1/3 red onion sliced
  • 1 tomato sliced
  • 1/4 cup arugula

Instructions

  1. Use a sharp knife and coarsely chop the salmon into small pieces. You can alternatively pulse in a food processor keeping the chunky texture.

  2. Add the chopped salmon in a bowl with the remaining ingredients to make the salmon patty. Mix them well until they're all blended.

  3. Shape into patties by dividing the mixture into 2 equal portions. Shape and press gently so they hold together.

  4. Pan-sear: Heat olive oil in a skillet and cook 3–4 minutes per side.
  5. Grill: Oil grates, then grill patties 3–4 minutes per side. Check out guide for How to Grill Fish without it sticking.
  6. Assemble The Burgers

  7. Make the burger sauce or lemon aioli. Mix all ingredients together in a bowl until sooth.

  8. Spread the sauce over the buns.

  1. Use fresh salmon for the best flavor and texture.
  2. Don’t over-process or finely chop the salmon meat. Leaving small chunks keeps burgers juicy.
  3. Chill patties for 15 minutes before cooking to help them hold shape if the weather is too hot.
