If you’re like us and LOVE everything birria, you will LOVE this recipe too! What started off as our love for birria tacos slowly shifted into our Lamb Birria, Birria Quesadillas, Birria Pizza and Birria Ramen! It’s like a whole world of tasty juicy meaty goodness!
So we set off our mind next into a birria burrito. We tested this a few times and made it for friends three times now at they were such a crowd pleasing recipe! It’s like the juicy tasty birria beef flavor, e hearty bean, rice, onion, cilantro and cheese filling all wrapped in a crunch toasted tortilla.
When you crisp the finished burrito in a skillet, you get a lightly crunchy, golden tortilla outside, melted cheese inside, and juicy birria throughout. That’s what makes this more than just a tortilla filled with leftover meat.

What Is a Birria Burrito?
A birria burrito is a flour tortilla burrito filled with shredded birria, usually beef, along with ingredients such as rice, beans, melted cheese, onion and cilantro.
The finished burrito is often toasted or crisped on a hot griddle and served with birria consommé. Unlike birria tacos, the burrito uses a large flour tortilla that can hold a more substantial filling.
So we added rice, beans (try our Mexican Black Beans) avocados and jalapeno slices! You can add in your favorite fillings too!

Ingredients You’ll Need

- Beef Birria: You’ll need really good and tasty birria recipe to make a good burrito. Use the tender shredded beef with enough consommé to keep it juicy and saucy.
- While we also love a Lamb Birria, we’ve seen people make it with goat meat. We have yet to try that!
- If making it from scratch you’ll need a chuck roast that you will braise dried ancho peppers, cloves garlic, chili, a blend of spices including Mexican oregano, bay leaves in a rich broth using a Dutch oven or heavy duty pan. You’ll also find instructions here to make it in a slow cooker, but both ways you’ll have juicy meat that’s laced in a rich sauce.
- Tortillas: You need the large size tortillas to hold enough filling and roll the burrito securely.
- Cheese: Oaxaca cheese melts beautifully and works especially well here. Mozzarella, cheddar, pepper jack or any other melting cheese works too.
- Large White onion: Finely diced onion provides crunch and freshness.
- Cilantro: Fresh cilantro leaves balances the rich beef and cheese. You can use the stems while cooking the meat, but for filling or garnish we prefer leaves only.
- Consommé: This is essential for serving and for keeping the meat juicy and saucy. You’ll have this leftover from cooking the birria meat.
- Lime: A squeeze of lime right before eating brightens everything.
- Rice: Ideally use our Cilantro Lime Rice! It’s SO GOOD here!!!
- Beans: Again, while any black beans work, ideally we LOVE using our Mexican Black Beans!
- Seasoning: Every component of the burrito is well seasoned as it is, but you may beed a sprinkle of salt to enhance the flavors!
How to Make a Birria Burrito
Warm the birria meat and tortilla if needed
- Heat the shredded beef gently with a little some of the consommé. It should be juicy but not dripping wet.
- Now take the tortillas, and if you feel they are stiff, you’ll need to warm them up. While you do that in the microwave for just 8 seconds, we prefer regular stove top heat or oven heat briefly until it’s malleable.
- You need to heat the tortillas just enough to be able to roll them without cracking.
Layer The Burrito Filling

- Start layering the Cilantro Lime Rice and Mexican Black Beans at the bottom of the tortilla.

- Top that with a generous layer of cheese in the center of the tortilla.
- Notice how all the filling is placed right at the center of the tortillas unlike when making Chicken Flautas or Air Fryer Taquitos.

- Now add in the birria meat over the cheese with some sauce.
- To get the authentic Birria flavors in your burritos, top that with minced onions and cilantro. Optionally we also added sliced avocados and jalapenos.

How to Roll A Burrito

- Start by gathering the filling along the bottom two thirds of the tortillas.

- Fold the tortilla side closest to you to cover about half of the filling.
- Now gather the sides of the tortilla to seal the edges so that the filling doesn’t ooze out.

- You’ll still feel that the filing isn’t fully covered, so you’ll swiftly clump the filling in and roll the tortilla.
- Roll to fully seal the filling inside and make sure it’s rolled tight. Like really TIGHT.

- At this point the burrito is ready, so repeat the same process until you finish the whole amount you’re making.
- While you can eat it as is, we prefer toasting the burrito in a hot skillet.

- While this step is fully optional, it creates a wonderful texture contrast you can’t miss!
- Heat a skillet or griddle over medium heat. Brush or briefly dip the outside of the burrito in the flavorful red fat from the consommé.

Ingredients
- 4 Flour tortillas Large size
- 2 1/2 cups cooked rice Cilantro lime rice is best
- 2 1/2 cups black beans mexican black beans is best
- 4 cups cheese shredded cheese of your choice
- 3 cups Beef birria meat in sauce
- 1 cup white onion minced
- 1 cup cilantro leaves minced
- 2 Avocados sliced
- 2 jalapeno sliced, optional
Instructions
