I absolutely love pizza, and ever since I have gotten my hands on this recipe, my pizza game has levelled up! Yes it’s THAT delicious. So I am sharing this recipe with you guys because I seriously don’t want you to miss out!
What is Birria Pizza?
It’s a pizza with birria meat on it..and it’s absolutely scrumptious. Instead of regular meat toppings, we use leftover birria meat and loads of cheese. The homemade birria stew is used as pizza sauce instead of usual marinara sauce and that’s what takes the flavor level to infinity.
Birria pizza is where Mexican meets Italian and as foodies, we absolutely love this combo. The Mexico-Italian combo is getting popular quickly and rightly so!

I normally make birria pizza when I have leftovers on hand and want something absolutely yummy! This pizza recipe is perfect for those lazy weekends when you’re craving comfort food without the fuss! Make it with leftover Lamb Birria for serious flavor!
What type of pizza dough is best for Birria pizza?
Homemade pizza dough works best for birria pizza compared to store-bought one. The texture and taste of home made pizza dough cannot be beat. I use this no-knead pizza dough recipe to make my birria pizza and it always turns out superb.
If you don’t want to wait overnight and don’t mind kneading then this pizza dough recipe is highly recommended. Each has quite a different texture so go ahead and check each post (video, tips and recipe) before deciding.
Ingredients For Birria Pizza
Pizza Dough– I use homemade no knead pizza dough to get that extra airy dough.
Birria Stew or Consomme- Use birria stew as pizza sauce to add heaps of flavor to the pizza.
Birria Meat- the star of the show- the leftover tender beef or lamb birria.
Cheese– mozzarella, monetary jack or cheddar cheese- be generous with the cheese
Toppings– whatever toppings you like on your pizza. I used classic flavors of Birria like onions, jalapeños and cilantro.
How to Make Birria Pizza
- Start by stretching and preparing the pizza dough.
- Once the dough is ready, start layering it.
- For the first layer, I used cheese to avoid the dough from being soggy.
- On top of cheese, I used a generous amount of birria stew so the cheese is covered nicely.
- On the top layer, I added birria meat.
- Then some more cheese and jalapenos plus your favorite toppings.
- Now it’s time to bake the pizza.
- Once the pizza is baked and ready out of the oven, it’s time to add more toppings : white onions, jalapeños and cilantro.
- Serve with lime wedges and enjoy dipped in more birria stew…
Toppings for Birria Pizza
Hot sauce– I love hot sauce and use it on everything. If you like it spicy, try it on pizza.
Radishes– To add peppery crunch, although this is optional.
Onions– You can never go wrong with onions.
Cilantro– Adds a bit of freshness to cheesy birria pizza.
Lime wedges- Lime and birria are best buddies.

Ingredients
Pizza
- 1/2 batch no knead pizza dough you'll need half of it for one large pizza
- 2 cups cheese mozzarella with monterey jack or am combo
- 3/4 cup Birria Stew
- 1 cup Birria Meat or lamb, shredded finely.
- 1/3 cup onion white onion, deiced
- 1 Jalapeño sliced
Birria Topping and Dip
- 1/3 cup white onion diced
- 1/4 cup cilantro leaves minced
- 1 Jalapeño sliced
- 1 cup Birria Stew
Instructions

Make sure your pizza dough is ready to work with. That means if you're making the Overnight pizza dough-it has risen and ready the next day. Or if you're making the homemade pizza dough, that it has risen the first rise and ready to shape and use.

Preheat the oven to the highest setting possible. If you have a baking steel or pizza stone--place that on the rack before preheating.

Stretch out your pizza dough to the desired thickness you want the birria pizza to be.

The first layer over the pizza dough is the cheese. Spread a nice layer to cover all the surface of the dough. Use about 1 1/2 cup.

Take your birria stew and spoon in the sauce over the cheese. if some of the sauce leaks into the dough, it's ok. As long as the cheese covers the majority of the dough then you won’t end up with a soggy pizza.

Add the shredded beef or lamb over the sauce layer,

Finish off with the toppings and a scatter of more cheese (1/2 cup).

Bake the pizza for about 15 minutes until crisp. If you like a charred cheese top, feel free to broil the pizza for a few extra minutes.

When out of the oven, add some of the onions , cilantro , jalapeños and figs if you want.

Take a pizza slice and dip it right into the birria stew for maximum flavor!
