The Mexican-American delicacy is making waves in the food world, and for all the right reasons. We know Birria is an old Mexican dish, but Birria Tacos blew up recently when it caught the attention of food bloggers and influencers. 

In the United States, Birria tacos caught the attention of the masses when a commercial from a Hispanic restaurant aired during the 2019 super bowl. Suddenly everyone started talking about the red, meaty tacos that looked heavenly.

Tiktok also played a significant part in making Birria tacos go viral. The hashtag birria tacos have more than 660 million views on TikTok alone. 

Birria Tacos Ingredients

  • Guajillo chilies — These are one of the main components and flavors of a Birria taco. It’s a dried type of Mexican chilies that have a sweet, fruity, tangy and smoky flavor.  Guajillo chillies are mild to medium spicy, so they won’t overwhelm the birria tacos recipe with spice.

  • Chipotle in Adobo  — Smoky canned chipotle peppers in adobo sauce for a deep flavor
  • Crushed tomatoes — Slight tangy and tomato taste to the sauce
  • Vinegar — Breaks down the meat
  • Garlic and Onions — flavor to the sauce
  • Dried spice — Mexican oregano, cumin and chilli powder
  • Whole Spice — cinnamon, bay leaf, cloves
  • Stock — to create a sauce

Birria Tacos Recipe

There are two main components to this recipe. There’s the Birria Stew which consists of cooking the marinated meat in the sauce along with other spices and stock. And then there’s the tacos itself–the making and flavoring of the final taco. 

So let’s start!

How to Make Birria Stew

  • The very first step is to soak the Guajillo chillies in hot boiling water and allow it soften slightly for 15 minutes.softened up soaked Guajillo chillies ready to use
  • It should look softened as above when ready.
     
    The remianing sauce ingredients are added into a blender including the chipotle, tomatoes, spiced and vinegar

  • Blend the sauce together in a high speed blender until smooth. You may adjust seasoning if you’d like.beef chuck meat for the birria tossed in the sauce to marinade
  • Now you’ll toss in the beef chuck meat in to the tasty sauce you’ve made in the blender and let it marinade anywhere between 2 hours and overnight.Onions being sautéed to make the birria stew

  • Now you’ll add in stock (use beef, chicken or vegetable stock).the birria stew ready to cook
  • Let the stew cook until the beef is fall apart and tender. This takes 45 minutes in your instant pot and about an hour and a half on the stove or in the oven covered with foil.

How to Make Birria Tacos

  • Now that your birria stew is ready, you’ll remove the meat from the sauce carefully and catch any fallen pieces of tender beef!

  • Keep the sauce in a large bowl separately as it will be used for dipping and flavoring the tortillas!two forks are used to shred the birria meat on a wooden board

  • Dip the tortilla (corn or flour) into the bowl of sauce for just a second. You’re just trying to flavor up the tortilla rather than getting the tortilla soggy.the dipped tortilla in a pan with cheese placed on one half of it

  • Let the tacos sear for 2 minutes and then flip them carefully.
  • They should be crunchy on both sides and completely stuck together from the melted cheese.

Birria Dipping Sauce

This sauce is so very unique to Birria tacos, as it’s used for serving. You’ll need the remaining sauce from the cooked meat and add some if it in a small bowl. To that you’ll add some fresh chopped cilantro and diced white onions. Mix and it’s ready!

  • Use Beef chuck for the best tasting recipe! They have the perfect taste, level of fat and the meat cooks so beautifully!
  • Look for Guajillo chillies at your ethnic aisle or from a Mexican store–they are a crucial flavor to the sauce.
  • Add in more spice to your taste such as chilli flakes to the sauce
  • Marinade the meat for up to 24 hours–the more the better. However you may still proceed without any if you’re rushed.

Ingredients

Birria Meat

  • 1.5 lb beef chuck with or without bone

Birria Sauce & Marinade

  • 4 Guajillo chiles soaked in 1 cup hot boiling water
  • 1 can chipotle in adobo
  • 1/2 cup crushed tomatoes
  • 1/4 cup vinegar white
  • 6 garlic cloves
  • 1 1/2 teaspoon oregano Mexican oregano is best
  • 1 teaspoon paprika
  • 1 1/2 teaspoon chilli powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt and pepper more or less to taste
  • 1/2 teaspoon chilli flakes optional for extra heat

Birria Stew

  • 2 onions diced
  • 1 tablepsoon oil
  • 3 bay leaves
  • 1 cinnamon stick whole
  • 5 cloves whole
  • 2 cups stock chicken, beef or veggies

Birria Tacos

  • 24 mini tortillas flour or corn, plain or flavored
  • 2 cups cheese Monterey, cheddar or your favorite
  • 1/4 cup cilantro chopped
  • 1 white onion diced finely
  • 2 jalapenos sliced (optional for extra heat)

Instructions

  1. Start by soaking your Guajillo chiles in the hot water in a bowl and cover the bowl with a plastic wrap so it softens up.

  2. Once the pepper are softened, they're ready to use. Usually this takes around 15 minutes.

  3. In a blender add all the marinade ingredients.

  4. Add to them the soaked and ready Guajillo chiles.

  5. Blend until smooth and silky.

  6. Coat the meat with the blender sauce and marinade or proceed with the recipe.

  7. You can marinate the meat for upto 12 hours.

  8. To make the birria stew: sautee the onions with the oil.

  9. You can use an instant pot or large stovetop pan.

  10. Once the onions are translucent, add in the meat and sauce mixture all at once.

  11. Add to that the whole spices.

  12. Then add in the stock and cook the stew.

  13. For instant pot --select pressure high and cook for 40 minutes.

  14. For stove top -- cover the pot and cook for 1 hour and a half.

  15. If you want to bake the birria -- place all ingredients with onions in an oven safe dish and cover the dish with foil. Roast in a 400 degree oven for 1 hour and half.

  16. The stew is ready when the meat comes out tender.

  17. Preserve the sauce and set aside.

  18. Take the meat and use a fork to shred it into fine shreds on a wooden board.

  19. Add the meat to bowl along with 3 ladles of the reserved sauce to flavor up the meat.

  20. Make the tacos: Dip each tortilla into the reserved sauce to flavor it up. Make sure to quickly dip and remove the tortilla-- this will prevent it from being soggy.

  21. In a heavy duty pan, place the coated tortilla in to the pan and add cheese over half of the tortilla.

  22. Pile up the meat over the cheese.

  23. Fold over the tortilla to cover the meat and press it down.

  26. For the dipping sauce : take 2 cups of the reserved birria stew sauce nd add to it the onions and remianing cilantro.
