Cranberry Brie Bites are a delicious and stunning appetizer for your Holiday table, and beyond. Delicate puff pastry enrobing creamy brie cheese, some hot honey, cranberry sauce and fresh rosemary. If you’re in the look for Appetizer Recipes, you’ve come to a festive and delicious one. These cranberry Brie Bites are made using basically 3 ingredients and can come together in minutes. So it’s a perfect last minute solution to a busy season.

  • Brie Cheese.
  • Puff Pastry.
  • Cranberry Sauce.
  • Hot Honey.
  • Fresh Rosemary.

How to Make Cranberry Brie Bites Step By Step

  1. First of all, start by cutting up the wheel of brie into half an inch size chunks. You don’t need to remove the rind as it will melt away.

  2. Next you’re going to remove the puff pastry from the fridge and dust some flour on the surface. Roll it slightly and then take a 2 inch round cookie cutter as shown above.

  3. Take the cookie cutter and press it down on the puff pastry cutting rounds of pastry enough to cover the chunks of brie. Make sure to utilize as much space as possible and cut up rounds very close to each other.
  4. To make the cranberry brie bites you’ll need either a muffin pan or baking sheet. We prefer a regular baking sheet lined with parchment paper.

  5. You’ll start by dropping a tablespoon of our viral Hot Honey Recipe at the bottom of the sheet. Hot honey and brie are a match made in heaven💛 If you cant do the heat in hot honey, then feel free to use regular honey as well. It works amazing!

  6. Now just for extra kick, which is optional, we add a sprinkle of chilli flakes. We tolerate heat too well LOL

  7. The chunk of brie goes right on top of that Hot Honey.

  8. Then you’ll take a cut up round of puff pastry and cover the brie. Make sure to drape the pastry on the sides as well to encompass the cheese inside the pastry. Press the sides and edges of the pastry to seal in the cheese and honey filling.

  9. Now repeat until you have all the baking sheet covered, the brie and pastry completed. A hand brushing the pastry with an egg wash before baking
  10. Make a simple egg wash by beating up an egg with a teaspoon of cream really well. Use a pastry to brush over the dough evenly before baking.

How to Serve Cranberry Brie Bites

optional way of serving for the holidays-- a wreath made by fresh baby spinach leaves in a round shape, and then some fresh cranberries dotted aver the wreath to make it look super festive and placed over a round white marble

While this is optional of course and very much only fitting for the Holidays, it’s worth a try! We LOVE making a wreath of baby spinach leaves, fresh cranberries over a white marble round. We also love adding some Sugared Cranberries.

Make sure to dot the cranberries in such a way that they clumped in groups and each group is separated by an inch from the next one. This way it looks prettier. Use some fresh rosemary leaves as well around the wreath.

Dollop some cranberry sauce over the baked brie bites and add some fresh rosemary on top.

Cranberry Brie Bites Tips and FAQ

  1. Make sure your puff pastry is defrosted in the fridge ahead of time, as store bought pastry is always frozen.
  2. You don’t need to cut off the rind of the brie, as it will melt anyway in the oven.
  3. If you’re not into spice, you can switch the Hot Honey with regular honey or even jam or cranberry sauce.
  4. While you can make the cranberry brie bites recipe in a muffin pan, we prefer a baking sheet.
  5. Flipping the pastry and filing upside down creates a beautiful crust on the cheese which we LOVE.
  6. Make sure to use the correct size round cutter and cut up the brie into the corect size. The pastry should be at least double the size of the cheese. 
  7. Egg wash is essential for a golden and crisp pastry. 
  8. Cool the pastries before attempting to remove them from the baking sheet. This allows the cheese to harden slightly.

What Other Types of Pastry can I use?

You can use crescent dough for this. Something like those Homemade Dinner Rolls dough as well works beautiful. And if you’re in the mood for a buttery appetizer, use  our FOOL PROOF Pie Dough recipe!

What type of Jam pairs with Brie?

While we love the Hot Honey or Cranberry sauce, you can use a fruity jam as well. Any type of berry jam, apricot or orange marmalade pair so well with brie cheese.

How to reheat the cranberry brie Bites

We LOVE our air fryer for reheating everything! Simple place them in a 350 air fryer and reheat for 4-5 minutes. If you don’t have an air fryer, then place them in a preheated oven in a baking sheet, cheese side up. The oven reheating will take about 10 minutes.

Freezing cranberry brie bites

To freeze this appetizer or make ahead of time: prepare the recipe and bake. Once cooled, store them in the fridge and reheat the next day. Or freeze them on a baking sheet, then place the frozen bites in a ziploc bag. To reheat from frozen, make sure you defrost first.

Ingredients

Pastry

  • 1 puff pastry defrosted

Filling

  • 1/2 cup hot honey RECIPE HERE
  • 1 Brie cheese wheel with rinds

Egg wash

  • 1 egg
  • 1 teaspoon cream

Topping

  • 1/2 cup Cranberry Sauce
  • Rosemary fresh

Instructions

  1. First of all, start by preheating the oven to 420 degrees F.

    Now begin cutting up the wheel of brie into half an inch size chunks. You don't need to remove the rind as it will melt away.

  11. Bake the cranberry brie bites until golden on top and the cheese slighty starts to ooze out.

  12. Remove the tray from the oven and wait for 10 minutes before removing the pastry.
