juicy air fryer steak bites with melted butter and parmesan

These air fryer steak bites are our new obsession. Whether you serve them as a main dish, add them to a salad, or plate them as an appetizer with dipping sauces, these steak bites are guaranteed to impress.

The beauty of the air fry option is how evenly it cooks. While we have our cast iron Steak Bites with Parmesan Cheese, and you can make it if you don’t have an air fryer. We LOVE air frying way more, the hot circulating air locks in flavor while giving you that crave-worthy sear.

With just a handful of pantry ingredients you’ll have a restaurant-style dish that feels gourmet yet effortless. If you’re a fan of steaks, you’re in the right place. Our Reverse Sear Steak is a genius foo proof recipe for perfect steak.

The classics include Ribeye Steak and Best NY Strip Steak, while the MUST try would be Lamb Steaks. For now we’re focusing on tiny bites of steak, and here’s why you’ll love it.

What Are Steak Bites?

Steak bites are simply small, bite-sized cubes of steak that are seasoned and cooked quickly at high heat until tender and juicy. Instead of serving a whole steak, the meat is cut into even pieces, which makes them cook faster and absorb flavor more evenly. They’re sometimes called steak tips or steak cubes, and they’re a favorite in restaurants because they deliver all the flavor of a steakhouse cut in a fun, shareable form.

The beauty of steak bites is their versatility. You can serve them as a main dish with sides, plate them as an appetizer with dipping sauces, or even use them as a protein topper for salads, rice bowls, or pasta. Because the pieces are small, they develop a perfect sear on the outside while staying juicy in the middle — a balance that makes them irresistible.

Why You’ll Love Steak Bites

  • TASTY and DELICIOUS: Seriously good tasting steak!
  • Fast and easy: Ready in under 15 minutes, perfect for weeknights.
  • Restaurant-quality: Juicy, tender steak with a golden-brown crust.
  • Versatile: Serve as a main, appetizer, or protein topping.
  • Air fryer magic: No smoke, no splatter, no guesswork.
  • Simple Ingredients: You just need your favorite steak seasoning and butter to make this at home. You can take it from there and expand on as many varieties as you want.
  • Affordable: You don’t need the most expensive cut of steak to make this tender steak bites recipe at all!=

Ingredients You’ll Need

Ingredients to make air fryer steak bites on a board

  • Steak. Use your favorite cut of meat. We love sirloin steak, Ribeye Steak, or NY Strip Steak.
  • Oil. A neutral oil is best for this recipe, so we use avocado oil.
  • Steak Seasoning. You can use homemade or store bought. Homemade includes salt and black pepper, garlic powder, onion powder, dried herbs.
  • Worcestershire Sauce. For the umami flavor. You can likewise use soy sauce here.
  • Fresh Herbs. Parsley, thyme, rosemary, oregano or a blend of them.

Garlic Butter Ingredients

flavored butter ingredients with some roast garlic, herbs and seasoning

  • Butter. Unsalted is best so you can control the salt, and make sure it’s at room temparture.
  • Roast Garlic.  This is optional but when added to the butter–OMG it becomes something else!
  • Herbs. Fresh parsley and oregano, and may use rosemary and thyme.
  • Seasoning. A simple salt and pepper is all you need.

How to Make Air Fryer Steak Bites

  1. Preheat the air fryer to 400°F (200°C). We love the basket air fryers compared to the other oven style ones. So that’s what we use.

  9. Finish off with some grated parmesan, more fresh herbs and chilli flakes, and you’re ready to devour!

Tips for Air Fryer Steak Bites Recipe

  1. Choose the right cut of meat. Sirloin offers great value, while ribeye delivers extra marbling and flavor.
  2. Cut the meat evenly to ensure even cooking.
  3. Don’t overcrowd your air fryer basket when cooking. This way the steak will sear rather than steam.
  4. You don’t need a thermometer here because they cook really fast and even. However if you’d like to use it, aim for 135°F (57°C) for medium-rare, 145°F (63°C) for medium.
  5. Flavor the butter! While it’s optional, it creates another level of steakhouse quality steak bites!
  6. Instead of resting time, the butter toss and garnish will create juicier results.

Best Steak For Steak Bites

A piece of steak to make steak bites in air fryer

Sirloin, ribeye, and New York strip are the top choices. Avoid lean cuts like flank or round, which can dry out.

Can I make these ahead of time?

They’re best served fresh, but you can prep the steak cubes and seasoning in advance, then cook just before serving.

Do I need to marinate the steak?

Not necessary, but leaving the meat in the seasoning and sauce for 30 mins wouldn’t hurt 🙂

How long do they take in the air fryer?

About 8–10 minutes at 400°F, depending on size and desired doneness.

How do I store leftovers steak bites?

Place cooled steak bites in an airtight container and refrigerate for up 5 days. Make sure they’re fully cooled before sealing to prevent excess moisture.

Can I freeze steak bites?

Yes! Cooked steak bites can be frozen for up to 2 months. Store them in a freezer-safe bag or container, removing as much air as possible. Thaw overnight in the refrigerator before reheating.

What’s the best way to reheat steak bites?

The air fryer is the best option. These juicy steak bites can be reheated in the air fryer at 350°F for 2–3 minutes. This keeps the bites juicy while restoring a little crispness to the outside.

Can I microwave steak bites?

You can, but it’s not ideal. Microwaving often makes the steak chewy. If you must, reheat in 20-second intervals and cover with a damp paper towel to prevent drying out.
