STEAK BITES
These tiny bits of deliciously succulent, crispy-on-the-edges bites are a delicious blend of steak and spice in single bites. It’s a show-stopping platter at your holiday table. It’s one of those platters that people can’t stop themselves from nibbling on!
That taste almost feels like biting in to your favorite charred grilled steak piece every single time.
The beauty of steak bites is that you pick your favorite steak. Since every steak can be cut into bite-sized pieces, you can choose the cut you enjoy the most.
I would suggest either sirloin, tenderloin, rib eye or NY strip. Today I’ve used sirloin since it’s tender, flavorful and inexpensive. You’ll find most steak bite recipes choose sirloin. However, you can really pick your favorite cut and use.
Another thing that makes this recipe so special is the butter. While so many recipes can be finished off with butter, it’s very rare for every bite of steak to be coated in butter. That’s where steak bites have the edge. Every bit of steak bite is well coated with butter!
STEAK BITES RECIPE
Today’s recipe starts with sirloin steaks cut up into inch-sized cubes. You can, however, cut them a bit smaller or bigger depending on your preference, and don’t worry about making them perfect.
Because we’re looking for the steak flavor to shine in steak bites, we don’t need to marinate the meat. We just need to flavor it.
To flavor the steak, you can probably skip or swap a few ingredients around—but here’s what I used. Salt, pepper, garlic powder, onion flakes, fresh rosemary (minced), and oregano.
Cooking the steak is KEY for the success of your steak bites recipe. And for that, I’ve made a recipe video for you to see it step by step.
PARMESAN CHEESE BUTTER
This is the REAL flavor booster and juiciness factor to this recipe. It’s not the butter used for searing the steak, rather, it’s the butter that finishes off the taste of the steak.
This Parmesan butter is made using Stella® Cheese. The shredded Parmesan in a cup is not just delicious, it’s really convenient. It’s shredded in a cup with the same fresh taste you get from a Parmesan cheese block.
Stella® Parmesan is aged for over 10 months and has that slightly nutty, tangy Parmesan flavor you crave. It’s perfect for topping soups, pasta, salads, sandwiches and more! Today, I’ve used it to add all the flavor and juiciness to these bites!
The butter mixture has a base of butter and Stella® Parmesan cheese. Other than that, the sky’s your limit! I’ve added fresh rosemary, salt, and pepper, and kept it simple. However, you can add fresh garlic, chili flakes, herbs, or whatever flavor you’d like to infuse the steak with.
Making the butter is the first step to this recipe, and you can make much more than you need because it keeps well in the fridge or freezer. I LOVE using the Parmesan butter with cooked pasta. Simply toss the pasta with the butter for an instant luscious, delicious pasta sauce!
I also love tossing roasted veggies, cooked chicken, or shrimp with the Parm butter. Imagine if everything tasted buttery-Parmy with a hint of herb 🙂
TIPS FOR PERFECT STEAK BITES
- Start with a cut of steak that you love. If you’re indifferent, then go for a sirloin cut. It’s tender, flavorful and inexpensive. If you absolutely love the NY strip, then certainly start with a NY strip cut.
- Cut the steak into equal-size bites (as best as you can), and aim for about 1-inch cubes.
- Season the steak bites with DRY spices only. Avoid using minced garlic, onions or any wet flavoring. This ensures the bites will have a nice golden crust and no water is in the pan.
- Sear the steaks in small batches. Avoid crowding your pan if you’re looking for a nice charred crust on the bites.
- Flip the steak once or twice at most. Don’t be rushed to flip, toss or move the steak bites around in the pan.
- Remove the bites to a plate while you work in batches, but don’t cover them.
- To add garlic, onion, ginger, or your favorite flavor, do so when you’ve seared all the bites and removed them from the pan. Add a touch of butter, sauté garlic/onions, and then return the steak bites back.
- Don’t overcook the meat when you return them to the pan. Less than a minute of heat is needed.
- Add the flavorful butter Parmesan and toss the steak bites well, allowing the butter to melt with the heat of the bites.
- The Parmesan butter is the final most dominant flavor the steak bites will have, so don’t skimp on it! It also adds a juicy feel to the steak.
- Serve on a platter for the perfect gourmet holiday dish. Also serve it alongside bread, pasta, veggies, fries or salad. Try to serve it scooped up with a spoon or individually skewered for a fun way to socialize and gather around food.
- Sprinkle a final touch of Stella® Parmesan Cheese and serve right away!

Steak Bites with Parmesan Cheese
Ingredients
Steak Bites:
- 1 pound sirloin steak trimmed and cut into 1-inch cubes
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 2 teaspoons oregano
- 1 Tablespoon onion flakes
- 3 tablespoons rosemary leaves minced
- 2 tablespoons butter for searing
- 2 cloves of garlic minced
Stella® Parmesan Cheese Butter
- 6 Tablespoons Butter unsalted at room temperature
- 2/3 cup of Stella® Parmesan Cheese cups
- pinch of salt
- 2 tablespoons fresh rosemary minced
- 1/4 teaspoon black pepper
Instructions

Make the Stella® Parmesan Cheese Butter: In a bowl or using a mortar and pestle, start smashing all ingredients together until they blend well. Set the butter mixture aside. Extra butter mixture can be kept in the fridge or freezer. Make sure you wrap it with parchment paper and form it into a log shape so you can slice it as you need. Read the Parmesan Cheese Butter section above for how to use it.

For the Steak: Add all the steak bites in one bowl and season with all the spices (except garlic and butter). Toss well.

Preheat a cast iron pan or grill pan, and add the butter. Start searing the steak bites by adding just a few at a time without crowding the pan. Once it’s sizzling and has a nice brown crust, flip the steak bite. This takes about 2-3 minutes of cooking per side for medium rare.

Remove the ready steak bites onto a plate and continue with the remaining pieces of steak. Add extra butter if needed for searing.

Once all the steak bites are ready, remove them from the pan and add the garlic with a teaspoon of butter.

Sautee the garlic for just 1 minute until fragrant, and add the steak bites all at once back to the pan.

Now add the Parmesan Cheese Butter (2 tablespoons at a time), and toss the steak bites with it while turning off the heat.

Keep tossing and adding the butter until every steak bite is coated.

Serve the steak bites with an extra sprinkle of Stella® Parmesan Cheese and fresh rosemary.
