If you have an air fryer, then you must try this Air Fryer Baked Potato! Super crispy skin with a soft and fluffy inside, this air fryer baked potato recipe with video will be the best side dish to your main! Today’s recipe is pure comfort food and I’m making it easier and quicker, yet the taste is just as delicious! My air fryer recipes are one of my favorite shortcuts to easy dinners! Air Fryer Chicken Wings , Air Fryer Salmon, Air Fryer Chicken Legs , Air Fryer Lamb Chops with Poblano Sauce, Air Fryer Fish For Air Fryer Fish Tacos are some of my favorites!

While I have baked potatoes in the oven before, I seriously can’t recommend enough making baked potatoes in the air fryer!

Why Air Fryer Baked Potatoes?

Once you’ve used the air fryer to bake your potatoes you really won’t want to try any other method again.

  • The inside of the potatoes are super fluffy. Like so  soft.
  • The skin is crispy  (no more potatoes that are hard on one side and soft on the other).
  • The air fryer also cuts your cook time so making fluffy baked potatoes doesn’t have to take so long.
  • No need for foil wrapping or any prep ahead of time.
  • It’s SO EASY!
  • Versatile seasoning–keep it as simple as salt and pepper baked potatoes, or use any seasoning blend.
  • The texture is unbeatable which in turn makes the taste unbeatable–so overall air fryer baked potatoes are more delicious! 🙂

Before we get into making this recipe, I can’t stress the importance of using Russet Potatoes to make the best baked potato recipe! 

How to Make Baked Potatoes in an Air Fryer

There aren’t too many ingredients involved in making this baked potato recipe, but a few more than you might think just to make it extra flavorsome. In this recipe, I use Russet potatoes (key for success), Olive oil and seasoning.

Like I mentioned, any seasoning as simple as salt and pepper is works great! however today I used a combo:

  • Salt and pepper
  • Garlic Powder
  • Chilli Powder
  • Paprika 
  • Olive oil

Making Baked Potatoes in the Air Fryer

Firstly you need to prick the potatoes evenly all over with a fork. This basically stops your potato from bursting while cooking.

Then add your salt and pepper and other spices to the potatoes and then add a generous amount of olive oil and pour it over your potatoes. Make sure to rub the spices and oil thoroughly into the skin and that all the skin is coated.

This ensures that you get nice crispy skin when they have finished cooking and that the flavor is distributed evenly.

Place them in one layer in your air fryer (they will not crisp nicely if you overfill your air fryer) and air fry at 400 degrees F. You need to flip the potatoes halfway through cooking to ensure crispy skin on both sides and that they are evenly cooked through.

Once your baked potatoes have finished in the air fryer, it’s time to add the finishing touches to make them irresistible.

Finishing your Air Fryer Baked Potatoes

Slice them open show the fluffy potato inside and a generous lump of butter to the middle of the potato. This will melt through the rest of the fluffy part of the potatoes.

Now it’s time to add the fresh herbs and spices and then they are ready to serve and enjoy.

To really make this recipe extra tasty, you can serve with sour cream. This adds a little freshness to this recipe and makes it really irresistible.

Air Fryer Baked Potatoes Recipe FAQ’s

What is the best type of potato for baked potato?

All potatoes are great when baked, however Russet Potatoes are the perfect candidate. They have a thick skin which crisps up beautifully. The insides are starchy so it mashes up into a soft fluffy texture, and finally the whole potato is sturdy enough to be loaded with endless toppings once baked.

How long does it take to cook baked potatoes in the air fryer?

For an average-sized baked potato, they should be properly cooked and fluffy in about 30 minutes. However, you may need to adjust this up for down depending on the size of the potatoes you have. The total cook time of this recipe, including preparing the potatoes before and after they have cooked should be about 40 minutes.

Can I make a baked sweet potato air fryer recipe?

Yes, you can! You can prepare them in exactly the same way and cook them in the same way in the air fryer. You will just need to reduce the cooking time as the sweet potatoes cook much quicker than regular potatoes.

Can I air fry baked potatoes from the instant pot?

Yes you can precook your potatoes in the instant pot before adding them to the air fryer with the spices and oil to crisp up the skin. If you do it this way you will reduce the cooking time drastically. Just make sure you Pat them dry when your potatoes come out of the instant pot before adding the spices and the olive oil.

You will also need to reduce the cooking time in the air fryer as you will only be using this to crisp the skins up. You then follow the rest of the recipe as above.

Ingredients

Potatoes

  • 4 Russet Potatoes
  • 1 1/2 teaspoon salt kosher
  • 2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 2 teaspoon of chili powder
  • 1 teaspoon roast pepper or paprika
  • 1/4 cup olive oil

Filling

  • 4 Tablespoons Butter unsalted
  • 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons rosemary fresh leaves, minced
  • 1/4 cup parsley minced
  • 1/4 cup parmesan
  • 1/4 teaspoon chili flakes to taste

Instructions

  1. Wash and dry the potatoes and gather the seasoning.

  2. Use a fork and prick each potato --about 5 pricks per potato.

  4. Toss well and make sure it's coated.

  5. Place the potatoes in a single layer in the air fryer basket and air fry at 400 degrees F for 22 minutes.

  6. Flip the potatoes and continue air frying for another 20 minutes until done.

  7. Slice each potato in half by length.

  8. Place a tablespoon of butter in the center of each cut potato and season with seasonings and herbs. Sprinkle cheese if you like.
