What is Pumpkin Spice Oatmeal Latte
A pumpkin spice oatmeal latte recipe is literally a merge of pumpkin spice latte and pumpkin spice oatmeal. In my opinion it’s certainly the best of both worlds.
This is totally versatile when it comes to consistency. You can prefer your oatmeal latte a bit on the thick oatmeal side, while someone else may prefer a runny texture. So the amount of liquid is totally up to you!
Likewise, you can make this latte vegan or not, gluten free or not, and heavy with a whipped cream topping or light with a simple frothed milk topping. So let’s agree, there’s NO way you can miss out on this!
The spice is totally optional, I would go with a touch of pumpkin spice or make a mix of cinnamon and ginger only.
The chocolate coated pumpkin seeds are optional, but absolutely worth it! It’s crunchy, chocolatey and pumpkin-y! If you’re looking for perfect healthy pumpkin seed snack, you’ll love these! You almost need a fraction of the recipe for latte and you can keep the rest for a happy day!
How to Make Pumpkin Spice Oatmeal Latte:
Start by making a thick pumpkin spice oatmeal. Cook the oatmeal and pumpkin puree, pumpkin spice with some brown sugar (or honey) and milk.
Then you’ll divide the pumpkin spice oatmeal between your serving cups and pour hot espresso right over that. Top that with some frothed milk and finally the chocolate crunch pumpkin seed.
I use a cinnamon stick for garnish and that also is optional.
At this point you can mix the latte together. Likewise, you can sip up the coffee and then use your spoon to eat the pumpkin spice oatmeal. Even if you do that, you’ll still get a nice faint blend of flavors in each layer.

Tips For Success:
Use the type of milk you like, and make it completely vegan by using a vegan alternative. If you’re gluten free, make sure to use gluten free certified oats.
Make the pumpkin spice oatmeal latte as thick in texture as a pumpkin oatmeal or as runny as a thick pumpkin spice latte or anywhere in between.
If you have ready made granola, you can use that as the crunch topping.
The pumpkin spice oatmeal can be made 3 days in advance, and on the day of serving, brew the espresso and serve right away.
You can skip the frothed milk topping, or make a rather decadent whipped cream one.

Pumpkin Spice Oatmeal Latte
Ingredients
Pumpkin Spice Oatmeal:
- 1/4 cup Pumpkin Puree canned
- 1/2 teaspoon pumpkin spice
- 3 Tablespoons brown sugar more or less to taste
- 1/2 cup Oats rolled or even quick cooking
- 1 1/4 cup milk any type
- 1/2 teaspoon vanilla
Latte:
- 1/2 cup espresso freshly brewed
- 1/4 cup milk frothed (any type)
Chocolate Crunch Pumpkin Seeds:
- 1 cup pumpkin seeds raw unsalted
- pinch of salt
- 3 Tablespoon honey or maple syrup
- 1 Tablespoon cocoa powder
Instructions

Preheat the oven to 350 degrees. Make the pumpkin seeds by mixing all ingredients together and spread the pumpkin seeds on a baking sheet in a single layer. Roast the seeds for 15 minutes and remove them from the oven. They will harden as they cool down.

In the meantime make the pumpkin spice oatmeal. In a medium pot, place all ingredients and cook over medium low heat until the mixture thickens and bubbles for 5 minutes. Remove from the stove and divide the pumpkin spice oatmeal between 4 small mugs or 2 large ones.

Brew the espresso and divide it evenly over the pumpkin oatmeal in each cup, then top with the frothed milk or whipping cream and a sprinkle of chocolate pumpkin seeds. Place a cinnamon stick in the middle and enjoy! Sprinkle some cinnamon on the top if you like!

Oh my word this sounds incredible! I have never thought to put oats into a latte, but seriously this looks delicious. I am a fan of pumpkin any time of year, and with the cold we’ve been having I’m even more craving it!
