Ingredients
Mussels
- 4-5 pounds fresh mussels in the shells
Sauce
- 1 tablespoons olive oil
- 1 shallots minced
- 3 cloves garlic minced
- 1 tomato diced
- 1-2 Tablespoons rosemary fresh herbs of your taste
- 1 lemon slice more to your taste
- 1 tabelspoons Italian seasoning
- 1/2 teaspoon salt and pepper more or less to taste
- 1/2 teaspoon chili flakes
- 2 tablespoons parsley minced for garnish
- 1 lemon wedges for garnish
Pasta
- 1 lb Linguine or pasta of your choice
Instructions
-
Follow this guide for Mussels, clean the mussels and discard any open or cracked shell mussel.
-
Cook the pasta in well salted water until al dente. Reserve some pasta water before draining.
-
Warm olive oil in a large skillet or wok and sauté the shallots and garlic. Add in herbs and cook until softened and fragrant.
-
Add in the tomatoes and cook until the water has evaporated.
-
Now add in the mussels, seasoning, lemon zest and juice (or just throw in a lemon slice).
-
Cook the mussels on high heat, and you will notice they release their juices and the shells start to open.
-
Toss the mussels every two minutes to make sure they get even cooking.
-
Once the mussels have opened up and released their juices, they're ready.
-
Add in the fresh herbs, and taste for seasoning. It's ready when the seasoning is.
-
You can choose to boil the sauce and evaporate it even more, or add extra pasta sauce for a saucier pasta.
-
Add the cooked pasta on to a plate or toss it directly into the skillet where you made the sauce.
-
Pour the mussels with sauce and everything right over the cooked pasta and toss it well.
-
At that point the mussel pasta is ready to ENJOY!!!
-
Garnish with extra chili flakes if you like and more lemon juice, SO GOOD!!!
