Expert and Pro Tips for Mussel Pasta

  1. Follow this guide for Mussels as it shows you everything about buying, cleaning and preparing mussels. You can also use Green Mussels although they're best baked as showed in that recipe.
  2. Flavor the sauce with garlic only or shallots only, skip the tomatoes, or use all of those as we did here and make it your own!
  3. You can add more lemon if you want a super lemony flavored sauce, we prefer however just the lemon lice and zest. Then we add extra lemon juice just at serving. We prefer this way to avoid overpowering the flavor.
  4. Make sure to toss the mussels in the fragrant shallot garlic mixture to have them cook evenly and coat well in the sauce.
  5. Don't overcook the mussels. This is probably the biggest mistake people make. Mussels cook quickly and become tough if they sit over heat too long.
  6. You can decide how saucy or not you want the mussel pasta to be. You can either increase the heat and keep evaporting the mussel sauce until it reaches the consistency you want. Alternatively you can add extra pasta water to the saucepan and make the sauce even saucier!
  7. Discard any mussels that remain closed or un open after cooking, they're unsafe to eat.
  8. Taste seasoning, and adjust with extra herbs, chili flakes, lemon and serve right away! This is one of those pastas that is at its best straight from the skillet.

What Does Mussel Pasta Taste Like?

This pasta tastes briny, garlicky, fresh, lemony, and savory. The mussels have a delicate ocean flavor rather than the heavy fishiness some people associate with seafood. It's light enough to feel fresh but flavorful enough to be satisfying.

Troubleshooting

Why are my mussels chewy?

They were overcooked. Don't cook them for more than 6-10 minutes depending on the amount you;re using, and make sure to toss them regularly for even heating.

What if my mussel pasta is watery?

Too much broth or pasta water was added. Continue tossing the pasta over moderate heat so the liquid reduces and the starch can help thicken the sauce.

Why is my sauce oily?

The sauce hasn't emulsified properly. Toss the pasta vigorously while adding a small amount of starchy pasta water.

The pasta sauce feels gritty?

The mussel broth wasn't strained thoroughly enough. Strain it through a fine sieve before adding it to the pasta.

Why is it too salty?

Mussel broth can be naturally salty. Don't heavily salt the sauce until you've tasted it.

Why does my lemon flavor taste bitter?

Too much zest may have been used, or some of the bitter white pith was included.

Can I use frozen mussels to make mussel pasta ?

Yes, depending on the type of frozen mussels and whether they are already cooked. Follow the package instructions and avoid overcooking them. If they don't produce enough flavorful liquid, you will need to use the pasta water and replace it with that.

Can I use canned mussels?

You can make pasta with canned mussels, but it will be a different recipe. Canned mussels are already cooked and generally shouldn't be treated the same way as fresh mussels that release their own cooking broth. You will create the sauce yourself in this case. Follow our Sardine Pasta and replace the sardines with canned mussels, it comes out SO GOOD!!

Can Mussel Pasta Be Made Ahead of time?

It's best served immediately, but the mussels can be cleaned and the other ingredients prepared ahead of time.

If you have leftovers, refrigerate them promptly in an airtight container.

Reheat gently in a skillet with a small splash of water. Avoid prolonged high heat because the mussels can become tough.

For the best texture, don't fully assemble the pasta hours ahead.

Can you make mussel pasta without marinara?

Yes. This recipe uses the mussels' own cooking broth, garlic, olive oil, lemon, and pasta water to create a light sauce instead of tomato sauce.

Do mussels need to be cooked before adding them to pasta?

Fresh mussels should be cooked first. Their cooking liquid is then used to make the sauce, while the cooked mussels are added back near the end.

How long do mussels take to cook?

Mussels cook very quickly, generally taking between 6-8 minutes once exposed to steaming heat. Watch for the shells to open and avoid prolonged cooking. Depending on how big your pot is, it could take between 6-12 minutes at most.

Can you make mussel pasta without wine?

Absolutely. Wine is optional. Fresh mussels provide plenty of flavorful liquid on their own.

Why do you use pasta water in mussel pasta?

The starch in pasta water helps emulsify the mussel broth and olive oil and gives the sauce enough body to cling to the pasta.

Can you eat mussel pasta the next day?

Yes, provided it has been refrigerated promptly and stored properly. Reheat gently rather than cooking it aggressively.

What should I do with mussels that don't open?

Discard mussels that remain closed after cooking as they're not safe to eat.

What is the best pasta shape for mussels?

Linguine and spaghetti are excellent choices because their long strands hold onto the light seafood sauce.

What goes well with mussel pasta?

A crisp salad, grilled vegetables, crusty bread, asparagus, or another light vegetable side pairs particularly well.

How do you keep mussels from becoming rubbery?

Don't overcook them. Cook only until done, and then evaporate the sauce to your taste, and serve right away!
