Why You’ll LOVE Mandarin Orange Cake
- Mandarins are used in this recipe rather than just oranges. They have a unique flavor.
- They bring a distinct aroma and flavor to the recipe that infuses with this cake and pairs with it so well.
- To really get all the delicious flavors from the mandarine we use both the juice and the zest.
- This is a beautifully simple one-bowl recipe – no fuss involved.
- All you will need is a whisk and a bowl to create this seriously moist cake.
- In fact, this cake stays moist for days after baking due to the egg, oil and yogurt ratio.
- This cake has so many uses and it’s really versatile. You can make it with a lovey mandarine orange glaze, which complements the cake so well.
- You can also use this recipe to make multiple-layered cakes.
- It’s a great recipe to use for special occasions too, such as a Mother’s day brunch cake.

Ingredients for the recipe:
- Flour
- eggs
- baking powder
- baking soda
- salt
- yogurt
- oil
- sugar
- mandarin juice
- and mandarin zest.
How to Make Mandarin Orange Cake
- Firstly you need to preheat your oven and then line a 9-inch pan with parchment paper: fold over the paper into a cone shape, place the pointing edge of the cone in the center of the pan, and cut around the edge.
- Now the preparatory steps are done the next step is to mix the ingredients. Add the flour (you can sift this if you like to make sure there are no lumps), eggs, baking powder, sugar, yogurt, baking powder, baking soda, mandarin juice, and mandarin zest to a large mixing bowl. You don’t need a mixer for that.
- Using a whisk, mix all the ingredients together thoroughly until they are well combined. Don’t worry about any lumps in the mixture, this will just make for a more tender cake.
- Pour batter into the prepared pan and place it in the center of the oven to bake.
- Check your cake is baked with a cake tester or knife. Your cake is done when they come out clean. Once baked, take the cake out of the tin and place it on a cooling rack, and allow it to cool to a warm (not hot out of the oven) temperature before adding the optional orange cake glaze.
Mandarin Orange Cake Glaze (optional but so good)
If you really want to make this cake extra special, I definitely recommend adding the glaze to this recipe. It’s super silky and very aromatic making this cake irresistible. Similar to the Olive Oil Cake, you can have it as is, or with powdered sugar, or with the glaze.
All you need for this is Confectioners sugar, Mandarine orange zest, and mandarine juice, and mix them all together. It’s very easy. You can adjust the thickness of the glaze by adding more juice to thin it out or more confectioners sugar to thicken it up.Orange Carrot Cake has a video and tutorial on the glaze.
Make sure you add this when the cake is still warm (halfway through cooling) by pouring it over the cake. You may need to spread it out to cover the top of the cake. Allow the cake to cool to room temperature. Cut the cooled cake and enjoy!
