Shrimp Ceviche can easily be made into a light dinner, a really light meal that fills you up with protein and packs so much flavor! For convenience, and because our kids LOVE shrimp as well, we opt to make this recipe with cooked shrimp.
What is Shrimp Ceviche
Ceviche is typically a dish made with raw seafood, lime juice, a variety of herbs and other toppings. These toppings or flavoring ingredients range from avocado, mango, cucumbers, avocados , onions, garlic, and more. The idea of a ceviche is cooking seafood bits in lots of lime juice.
While classically it’s made with raw shrimp that cures in salt and lemon juice, we prefer the cooked shrimp version. Both are equally tasty, I must say!

Shrimp Ceviche Ingredients
- The shrimp
- Diced onions
- Avocados
- Jalapenos (optional but SO GOOD)
- tomatoes, diced
- diced cucumbers
- Lots of cilantro
- Lemon/Lime Juice
Is the Shrimp Raw in Ceviche?
While classically yes, the recipe can be made with cooked or raw shrimp. If using raw, the amount of acid in the lime juice will cure/cook the shrimp for you. Since the shrimp is cut up into small diced pieces, it needs only 30 minutes.
However, our family preference is using cooked shrimp.
How to Make Shrimp Ceviche
- The first thing you’ll do is have your ingredients diced, including the shrimp. You need them all to be approximately the same size. That’s a little less than 1 inch dice here for us.
- Next step is to add all the diced shrimp into a large bowl for marinating, or better off using the serving platter you plan to serve it in. Season with salt, pepper and add in the lime juice. LOTS of it.
- Add all remaining ingredients over the shrimp in the same platter and finish off with lots of cilantro. Then toss them around really well to dress up every ingredient with the lime juice.

- We opt for using cooked shrimp for this recipe, always as it packs more flavor and it’s more kid friendly since this is a family recipe we ALL love.
- Make sure the ingredients are all diced to approximately the same size for easy serving.
- You can use lemon juice if you can’t find lime, either way the acid is what you need to marinate and cook the seafood with.

How to make Shrimp Ceviche In Advance?
You can make this recipe up to 12 hours in advance and store in the fridge until ready to serve. For last minute prep, always allow at least 30 mins for the lime to infuse the dish.

You can make the classic recipe as we did above, or try adding sweet mangoes, some corn, bell peppers, green onions, and your favorite variations!
Try changing the lime and lemon juice by adding an orange or grapefruit twist, any citrus combo works beautifully here!
You can also change the type of fish, instead of Grilled Octopus, make octopus ceviche! Also tuna ceviche, scallops and more!
How long does Shrimp Ceviche Last?
Because of it’s high acidity, it’s best to eat the dish within 1-2 days. We absolutely prefer eating it the day of, but if you must store it, then make sure it lasts no more than 1-2 days in the fridge.

Shrimp
- 2 lbs shrimp cooked and diced into nearly 1 inch pieces
- 1/4 teaspoon each salt and pepper
- 1/2 cup lime juice or lemon, or a combo, or any citrus
Ceviche Ingredients
- 1 cup tomatoes diced
- 1 jalapeno minced
- 1 1/2 cup cucumbers diced
- 2 avocados diced
- 1/2 cup red onions minced
- 1/2 cup cilantro minced
Instructions

Start by chopping the shrimp into 1 inch chunks, make sure the remaining ingredients are approximately the same size.

Place the shrimp on a serving platter along with the seasoning and the lime juice, and toss well.

Add the remaining ceviche ingredients over the shrimp and mix everything well.

Cover and let it sit for about 30 minutes to cook, marinate and infuse the flavors.
