Hi Friends 🙂 So many of you have been asking about summer entertaining and I’m super excited for this recipe, because it’s probably the answer to all your questions!
I don’t want to get started on our “not so summer” weather this year, I wanna be thankful it’s not freezing cold. However, I haven’t been grilling as much as I’d love to (so far) because of the rain. But as soon as the sun’s out, you bet my BBQ will on!
Why This Lemon Chicken Recipe
Lemon chicken screams summer! It’s bright, fresh, tangy, zesty and slightly spicy. It also pairs beautifully with hummus.
Now this lemon chicken recipe can be made using whole chicken or bone in pieces. However, using boneless skinless chicken breasts will eliminate any marinating or waiting time. So that’s what I’ve used today.
Putting this lemon chicken platter together will literally take you less than an hour. And it’s good enough to entertain 6 people. So for that, I would say it’s my go to chicken platter to entertain with all summer long!

Why Sabra Hummus
Hummus is the centre stage I would delete “stage” of this platter. It adds that luscious, creamy feel to the meal without adding heavy-ness. It’s wholesome, nutritious and the best plant based protein option you can find.
When it comes to Sabra Hummus in particular, I always reach for it because it’s absolutely delicious. It’s certainly because they start with high quality chickpeas and tahini, and also they’re always finished with a unique topping.
Today’s unique flavor is the Limited-Edition Salsa Verde hummus. It’s a new one, yet it quickly became one of my favorites! A bright taste of Mexico!
You get the same rich and creamy Sabra hummus that’s topped with the tangy, zesty flavor of tomatillos, mixed with jalapenos, cilantro and lime.

How to Make The Lemon Chicken
First of all, start with cutting up your chicken breasts into about an inch and a half cubes.
You’ll need a deep plate with a mix of your favorite herbs (I’ve used fresh parsley, oregano and mint), lots of minced garlic, lemon zest, mayonnaise (yes!) and spice.
Why mayo? It adds so much moisture to the chicken. Another lovely option instead of mayo would be Hummus. Yes Sabra Classic Hummus would make an incredible marinade for this lemon chicken. It adds flavor, moisture and an extra load of protein!
Why lemon zest and not lemon juice? I talk about this all the time at my cooking classes. Whenever you’re looking to add a strong lemon-ish flavor to your food without adding extra water from the lemon juice, add just the zest.
The lemon zest contains more flavor than the lemon juice, and yet it has no water, so your marinade won’t be too loose or watery.
The spice blend is whatever your taste feels like, so I should probably mention what I’ve used and leave it up to you to add more or take one out. I’ve used dried oregano, paprika, salt and pepper.
Similarly the herbs mixture, feel free to add in what you prefer or use it as is.
Since this is a lemon chicken recipe, I’ve skewered half a thin slice of lemon between each chicken piece for an extra lemony flavor. I’ve also grilled halved lemons and drizzled that grilled lemon juice on the grilled chicken. Highly recommend that!
Assembling the Lemon Chicken and Hummus Platter
The sky’s the limit to what you can add here, so this recipe is really just to inspire you 🙂
Alright, so first of all, the centre of your platter will be the hummus. Because pretty much everything around it pairs beautifully with it.
Then you’ll start arranging the lemon chicken on a side, some cucumbers, grilled skewered baby tomatoes, olives, charred bread, sweet cherries, avocado slices, grilled lemons, and a sweet peach salad with mint and feta crumbles.
Again, this is perfect as is for me and I would make this time and time again. However, I would also make this another day without the peach salad for example. Instead I may add a strawberry salad, or a corn succotash, or grilled asparagus!
There are so many ways to personalize your hummus and lemon chicken platter, so don’t feel discouraged if you’re missing an ingredient or if you dislike an ingredient here. To the contrary, making small changes to suit your taste will make you fall in love with this recipe even more!

Entertaining Tips
Sharing summer entertaining platters has become my only way to entertain this summer!
They’re very indigent, not sure what word you meant by indigent colorful, bright and there’s something for everyone! Always assemble your platter with a diverse combo of veggies, fruits, bread and condiments. I’ve also included feta cheese here because it pairs beautifully, but that’s optional.
Using hummus as the centre of your platter is genius because everything around it pairs well with it. So think the chicken, veggies, fruits or just bread. They all taste great with hummus alone!
This makes your life easier, because Sabra hummus has so many flavors to choose from and is readily available across the country. So all you need to plan for is the chicken, veggies, bread and fruit.
Using chicken breasts is a lifesaver since they don’t need marinating and grill time is about 15 minutes!
Adding some of your veggies or fruits on the grill is also a brilliant contrast of textures.
It’s great when you and your guests can assemble different BBQ platters, make your own BBQ wraps and have a relaxed fun meal.
Entertaining with a huge platter like this looks like a lot of work, while actually it’s not! It’s super easy to put together, so quick and yet feeds lots of people!

Lemon Chicken Hummus Platter
Ingredients
- For the Lemon Chicken:
- 2 pounds chicken breasts boneless skinless and cut in 1 and a half inch cubes
- 1/4 cup Mayonnaise plain or flavored
- 1/2 cup herbs fresh parsley, oregano and mint
- 1 lemon zested
- 6 garlic cloves minced
- 1 tablespoon paprika spicy or regular
- 2 teaspoons oregano
- 1 teaspoon salt more or less to taste
- 2 teaspoons pepper
- 12 Lemon Slices for Skewering cut in quarters
- Hummus Platter
- 2 283g Hummus xLimited Edition Sabra Salsa Verde Hummus
- 1 cup baby tomatoes skewered and grilled
- 2 lemons cut in half and grilled
- 2/3 cups olives any type you prefer
- 4 cucumbers mini ones cut in quarters
- 1 avocado sliced
- 4 pita breads thick Greek pita cut into 4 quarters
- 1/4 cup feta cheese
- Peach Salad below
- Peach Salad:
- 2 peaches sliced
- 1 tablespoon feta cheese crumbled
- 2 tablespoons mint leaves chopped
- 1 lemon juiced
- pinch of salt
Instructions

Preheat your grill to a medium high heat.

In the meantime, start with your lemon chicken. Mix all the ingredients (except the chicken and lemon slicein a deep plate or bowl and then add the chicken. Toss the chicken well in the mixture.

Start skewering the chicken on a metal or wooden skewer and add a quarter slice of lemon in between.

Start grilling the lemon chicken for 10 minutes (keeping the lid oand then flip the chicken. Continue grilling the chicken until it’s all cooked through. This will take an extra 10 minutes (depending on the thickness of your chicken and the heat of your grill).

When the chicken is done, squeeze the juice of the grilled lemons over them for an extra bright lemon flavor.

Alongside the chicken, grill some lemon and tomatoes skewered. Then take your pita bread and start charring them on the grill for 2 minutes too.

Peach Salad: toss all ingredients together.

Assemble your lemon chicken and hummus platter.

Place the Sabra Hummus in the centre of your platter and start arranging the remaining ingredients creatively around it.

Serve and Enjoy!!

Salsa Verde Hummus sounds so good! I love then lemon with the chicken, and I imagine that it was so tasty with the spice from the hummus!
This is perfect platter for entertainment. Lemon chicken and hummus is great combo. Allowing everyone to choose what ever topping they want on pita bread is the best part. Everyone gets to eat their favorite.
