Whipped Coffee, also known as Dalgona coffee is a delicious fluff of 3 ingredients. Today’s whipped coffee recipe or Dalgona recipe is made three ways: Classic Dalgona, Matcha Dalgona and Mocha Dalgona! Video and a secret ingredient included below!

Have you tried the whipped coffee hype that went viral last summer? For me, it was one of those viral trends that I was hesitant to dive into. But once I did, oh my! I couldn’t stop making Dalgona all summer long!

Here’s the how and why you need to try this whipped coffee recipe, and how I’m making it in three different versions for even more fun! Plus my secret ingredient that makes Dalgona coffee so good for you!!

WHAT IS WHIPPED COFFEE / DALGONA

A little background about this phenomenal whipped coffee recipe. It’s known as Dalgona coffee and it goes back to Korean street food. 

I will mention however that I have read about claims that whipped coffee is also famous in Brazil and India. So I won’t debate where it came from, I’m only here to tell you how creamy and luscious it is! 

The idea of whipped coffee is to combine equal parts of instant coffee and sugar, and add to that hot water (double the instant coffee amount). At that point you’ll simply whip the mixture until it’s fluffy, like really fluffy!

Serving the dalgona coffee is super easy over your choice of cold milk, ice and dollops of fluffy whipped coffee.

 

Now we have tested whipped coffee recipes so so many times until we came up with those fabulous THREE versions of it. 

Today I’m sharing a Classic Dalgona Recipe, a Matcha Dalgona recipe and a Mocha Dalgona Recipe.

HOW TO MAKE WHIPPED COFFEE /  HOW TO MAKE DALGONA

Gather your ingredients for the three way Dalgona part today!

  • Instant Coffee
  • Sugar
  • Matcha Powder
  • Cocoa Powder
  • Milk of your choice
  • Ice

MAKE DALGONA RECIPE

You’ll start by adding equal parts of sugar and instant coffee and equal parts of GLG Collagen in a bowl. How water goes in next and you’re ready to whip.

My favorite way and easiest way to whip the whipped coffee recipe is using an electric mixer. However, you can use a regular whisk and be prepared for a nice work out!

You’ll whip the coffee until you have a foam like whip similar to merengue. The beauty of this recipe is that you can make extra and store them in a sealed container for later use.

Now grab your cup, add ice to taste, and fill it with milk 2/3 of the way up. Use an ,cream scoop for perfect whipped coffee dollops, otherwise you can also use a spoon. 

Dollop the whipped coffee over the milk to fill your cup and you’re ready to sit back and enjoy the perfect cup of Dalgona coffee!!

Now, because we all have different taste with sugar, I’ll be answering some of the most common questions below.

What Kind Of Sugar Can you Use to Make Whipped Coffee?

Granulated sugar is best! It breaks down beautifully with whipping and helps the coffee whip. So think white sugar , brown sugar , raw sugar or coconut sugar. 

Can I make Whipped Coffee without Sugar?

Tricky one here! See I’m one of those people who doesn’t add any type of sugar to my regular coffee. Even those flavoured syrups, I always ask for sugar free because I feel sugar takes away from my coffee flavor.

However, that being said, when it comes to Dalgona coffee, I LOVE the sugar! It’s cold and refreshing, so sugar is part of the experience. 

Now if you prefer the Dalgona to be sugar free, you can absolutely make it without sugar. But keep in mind the coffee puff will not last more than a couple of minutes! Sugar helps the fluff stabilize and keeps the whipped coffee whipped for hours!

So if you absolutely need to make this recipe without sugar, keep that in mind.

Can You use Monkfruit or Any other Sweetener?

The trick is always to use a granulated textured sugar. So YES you can!

Can I use Hot or Cold Milk for Dalgona Coffee?

The original whipped coffee trend which went viral on Tiktok uses cold milks I’ve shown in the video here. However I have made it using hot milk and it works JUST the same!!

Keep in mind that the whipped coffee dissolved much quicker in the hot milk. 

There both delicious, but each is a different experience! Have some fun and try both versions!

MATCHA DALGONA

Well, I love matcha and making a matcha Dalgona is only natural! 

There are a few differences and tricks to matcha Dalgona recipe which you need to pay attention to.

Matcha isn’t granulated like the instant coffee is, so it will NOT whip on it’s own with sugar. No matter how you try!

I’ve seen people who egg whites and use it as a stabilizer to help whip the matcha. However I much prefer using whipping cream instead of raw egg whites.

Whipping the cream initially to a soft peak along with sugar and Collagen is key to the matcha dalgona. 

And at that point you’re ready to add the matcha tea and whip the mixture a little more until it’s stiff. 

Remember this version isn’t as fluffy as the original whipped coffee recipe, but it’s absolutely a must try if you’re into matcha!

MOCHA DALGONA

This is for all the mocha lovers! It’s everything a classic Dalgona coffee is, except with a touch of cocoa powder and a bit of extra sugar.

Again, when whipping this version, you’ll notice it doesn’t whip as tremendously as the original one. But it still whips beautifully and so delicious with some shavings of chocolate on the top for garnish!

Some more questions about making dalgona recipe for the first time.

I don’t have a hand mixer, how else can I make whipped coffee?

You can make whipped coffee using a good old whip if you don’t have a hand mixer. It is however a work out! And it can take you up tp 8 minutes of continuous whisking to get to the fluffy peaks you need. 

If you have a hand frother , you can also use that to whip the coffee. I will probably say that a hand mixer is your best bet, so if you’re looking to make whipped coffee more often, go for one!

Which Instant Coffee do you use?

Any brand of instant coffee (the granulated ones, not instant espresso) works well. Decaf and flavoured instant coffee work as well, but the 3 in 1 mix of instant coffee sugar and dried milk doesn’t work. 

Can I use regular Coffee to make Dalgona?

Unfortunately, no. Only instant coffee and only the granulated one works.

What Can I use Whipped Coffee with?

Other than a delicious cup of Dalgona Coffee, you can use the whipped coffee as a dip with your cookies, a topping for your brownies or freeze it to make fluffy coffee ice cream! YUM!!

Can I make whipped coffee ahead of time?

YES! You can make the whipped coffee and store it in a sealed container in your fridge for a few hours. If you feel it has deflated a bit, use your whisk and whip it for a few minutes before serving!

Does Collagen Change the taste or texture of my whipped coffee?

Absolutely NO! Collagen here is a plus plus for your whipped coffee! It doesn’t affect the texture or the whip of your Dalgona coffee at all, nor does it change the taste. It’s a bonus to your Dalgona cup!

DALGONA RECIPE TIPS:

  • Use only instant granulated coffee for this recipe, to instant espresso, and not a 3 in 1 mix. Decaf of flavoured instant coffee work as well.
  • Also use granulated sugar or granulated sugar substitute, avoid powdered sugars.
  • You can make the recipe sugar free, however remember the whipped coffee will deflate within minutes, so make and use it right away!
  • Adding collagen to the dalgona recipe makes it extra good for you without affecting the texture or the taste of your whipped coffee. 
  • Use quality collagen such as GLG Collagen Hydrolysate.
  • An electric mixer is your best bet for whipping the coffee really fluffy and in no time with minimal work. 
  • If you don’t have an electric mixer, you can use a hand frother or a whisk and fluff the coffee. 
  • The Dalgona recipe is delicious over cold milk or hot milk equally!
  • The type of milk you use is your choice, oat , almond or coconut milk if you like. Regular, low fat or fat free milk and lactose free milk all work the same here! I find myself using oat milk even though I’m not vegan, but I love the creamy taste of it with whipped coffee.
  • The best way to stop the whipped coffee over your milk is using an ice cream scoop. However a large spoon can do the trick.
  • When making variations such as the Matcha Dalgona or Mocha Dalgona, pay attention to the different ingredients and process (mentioned above and below).
  • Remember that the original classic Dalgona will always have the best whip and will keep the whip for hours, while other versions may deflate quicker, but still taste fabulous!
  • Store leftover whipped coffee in a container for hours or two days, but use a whisk to whip it back before using. 
  • This recipe is just as wonderful over hot milk! Just remove the ice form the recipe ingredients and use hot milk instead of cold.
  • ENJOY!!

Ingredients

Classic Dalgona:

  • 2 tablespoons instant coffee
  • 2 Tablespoons sugar
  • 2 Tablespoons Collagen Hydrolysate GLG brand
  • 1/4 cup hot water

Matcha Dalgona

  • 1/4 cup heavy cream 35 % only
  • 2 Tablespoons sugar
  • 2 Tablespoons Collagen Hydrolysate GLG brand
  • 1 teaspoon matcha powder more or less to taste

Mocha Dalgona:

  • 2 tablespoons instant coffee
  • 3 Tablespoons sugar
  • 2 Tablespoons Collagen Hydrolysate GLG brand
  • 1 teaspoon Cocoa powder
  • 1/3 cup hot water

Assemble Dalgona Drinks:

  • 2 - 3 cups milk of your choice
  • 1 cup ice

Instructions

  1. To make the classic Dalgona: Add all ingredients in a large bowl and use an electric hand mixer to whip up the mixture until it’s very light in color and fluffy in texture. This takes anywhere between 5-7 minutes on medium speed.

  2. To make the Matcha Dalgona: Whip the cream, sugar, collagen on medium speed for 3 minutes until fluffy and then add in the match powder. Whip for 2 minutes more until the mixture is stiff.

  3. To make the Mocha Dalgona: Add all ingredients in a large bowl and use an electric hand mixer to whip up the mixture until it’s very light in color and fluffy in texture. This takes anywhere between 5-7 minutes on medium speed.

  4. To assemble the Dalgona Coffee: Layer three cups with ice (about 1/3 cup of ice at the bottom of each cup). Fill the cups with milk 2/3 of the way up.

  5. Use an ice cream scoop to scoop up the whipped mixture from each of flavors. Scoop anywhere between 2-3 scoops for every cup of dalgona coffee.

  6. Serve with a straw and enjoy right away!
