I’m pumped to be sharing with you this chicken sandwich recipe! You’re most likely thinking because, well, who doesn’t crave a chicken sandwich in crunchy bread with some fries? But it’s even more, the chicken is packed with a smoky tomato marinade.
The bread is slathered with a Sriracha Caesar sauce, topped with fresh veggies and a tangy Kimchi slaw. This slaw is probably what you bite into and feel it rounds up the whole chicken sandwich experience into something unbelievable!
Why This Smoked Chicken Sandwich Recipe Works:
First of all, flavor. Also, more flavor. And finally, even more flavor! Ok, seriously, when you think of this chicken sandwich, just think flavors!

If you’re unfamiliar with the actual Kensington Market in Toronto, it’s basically a blend of ethnicity in a warm approachable neighbourhood. You can walk all day and taste every bit of culture as you go. And I feel this brand represents that in the most delicious way possible!
Let’s start with the chicken. It’s marinated in the Kensington Market Street Food Smoked Tomato Dressing which seemed like the perfect combo of smoky, tomato and tang for the chicken.
Because the dressing is so powerfully flavorful, the chicken only marinated for 30 minutes and tasted perfect!
I chose to grill my chicken today, but it would’ve been succulent if I had fried it too! Simply coat the marinated chicken in a seasoned flour mixture and fry all the way! So feel free to make it either way 🙂
To add another layer of flavor and a touch of spice to my chicken sandwich, I spread some Kensington Market Street Food Sriracha Caesar Dressing on my bread. It’s creamy, spicy and likewise, boosted with flavor and tang. The dressing here was the main flavor ingredient for my veggies/toppings in the chicken sandwich.
Now for the toppings, the sky’s your limit! I certainly will be making this chicken sandwich with different types of cheeses, greens, roast veggies, fresh veggies, fruits etc.. However, I won’t skip the Kimchi Slaw.
Can we talk for a minute about this Kensington Market Street Food Pickled Kimchi Slaw? You would probably have the slaw on the side of your chicken sandwich, but today I wanted to try something new.
Adding the slaw as part of the sandwich toppings was amazing. It gave my chicken sandwich that taste where you think, why can’t I stop eating this?! Certainly it was the Kimchi Slaw! Tangy, salty, slightly crunchy, sour and just perfectly spiced. Together with the chicken and Sriracha Caesar, it’s like a match made in heaven!
Finally, the bread. I picked a hearty, chewy bread to sustain all these toppings easily. However, if you’re more of a soft bun loving person, feel free to use that too!
How To Make This Smoked Chicken Sandwich:
Ok, let’s jump right in!
Marinate your boneless, skinless chicken breasts with the Smoked Tomato dressing, some fresh thyme leaves (or use dried), salt, pepper and minced garlic.
Marinate the chicken for 30 minutes and grill them in an indoor grill pan. An outdoor grill work beautifully too! Likewise, you can coat the chicken in a seasoned flour mixture and deep fry them for 10 minutes until cooked through.
In the meantime you’ll work on the toppings for the sandwich. Prep the onions, sun dried tomatoes, cheese, greens and bread.
Spread a nice layer of the Sriracha Caesar Dressing on the bottom half of your sandwich and top that with a slice of cheese. Add your greens, onions, Kimchi Slaw, chicken strips, sun dried tomatoes and more cheese.
I prefer to put my sandwich in a panini press as it’s a hundred times easier to eat with all the rich toppings! Plus it adds a nice layer of crunch which certainly adds more texture to this chicken sandwich!
Finally, once the sandwich is ready, serve that with some fries, a dipping of Sriracha Caesar and Smoked Tomato dressing on the side. Throw in some tomatoes and greens while keeping that jar of Kimchi Slaw to serve on the side too!
Tips For Success:
This chicken sandwich can be prepared two days in advance, but assemble the day of serving only.
Using the Smoked Tomato Dressing as a marinade not only adds flavor to the chicken. It also tenderizes the meat because of the acidity level in the dressing, so you get a really succulent grilled chicken!
Serving the fries and chicken sandwich with the Smoked Tomato Dressing and the Sriracha Caesar Dressing for dipping is an extra boost of flavor you can’t miss!
Grilling the sandwich in a panini press is highly recommended to keep all the toppings intact, so you can enjoy your chicken sandwich without the mess!
When it comes to the type of cheese, use a neutral tasting cheese. There’s plenty of flavors going on and I’ve found that something as neutral as provolone or Swiss cheese works best here. You don’t want to over power the sandwich with something like goat cheese.
If you have any leftover sandwiches, they keep well in the fridge and are perfect served cold for lunch the next day!

Smoked Chicken Sandwich with Kimchi Slaw
Ingredients
Chicken:
- 4 chicken breasts boneless and skinless
- 1/2 cup Smoked Tomato Dressing Kensington Market Street Food Smoked Tomato Dressing
- 1 garlic clove
- 2 tablespoons fresh thyme leaves
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
Sandwich:
- 4 sandwich bread Ciabatta bread
- 1/2 cup Caesar Dressing Kensington Market Street Food Sriracha Caesar Dressing
- 1/3 cup Kimchi Kensington Market Street Food Kimchi Slaw
- 1 red onion sliced
- 1 cup arugula
- 1/4 cup sun dried tomatoes
- 8 slices of provolone or any neutral tasting cheese
Serving:
- Fries
- Fresh tomatoes
- Fresh Arugula
- Kensington Market Street Food Smoked Tomato Dressing for dipping
- Kensington Market Street Food Sriracha Caesar Dressing for dipping
Instructions

In a deep plate, marinate the chicken with all the ingredients. Set aside for 30 minutes.

In the meantime, prepare the sandwich ingredients.

To grill the chicken: Preheat an indoor or out door grill to medium high heat. Place the chicken breasts on the hot grill and allow to cook for 10 minutes per side.

Once cooked through, cover with foil and allow it to cool down for 5 minutes before slicing.

When the chicken is ready, slice it into 1/4 inch thick slices.

Assemble the chicken sandwich: Spread 2 tablespoons of Sriracha Caesar Dressing at the bottom half of every sandwich.

Top that with a slice of cheese, some arugula, red onions, Kimchi Slaw, chicken strips, sun dried tomatoes and another slice of cheese.

Place the sandwich in a panini press and press on the grill for 4 minutes until the cheese melts and sticks all ingredients together.

Serve the chicken sandwich with fries and extra sauces for dipping.
