Why New York Strip Steak?
New York Strip Steak is a cut of beef that comes from the short loin of a cow. When the loin is boneless, it’s called a strip steak. It’s an extremely tender cut of beef that isn’t too expensive and has so much flavor.
The flavor of this cut goes beautifully with the simple seasoning in this recipe and it’s just mouthwatering! To get the most of your NY strip, make sure you don’t over cook the steak – more on that below!
I love finishing off my steak with blue cheese crumbles, but it’s completely optional! Another steak I love on the grill is the tenderloin to make Grilled Steak with Rosemary Lemon Butter.
You can also use the same NY strip and cut it into cubes to make these succulent Steak Bites with Parmesan Cheese.
Ingredients for NY strip steaks on the grill
What’s great about this recipe, is that you don’t need an endless amount of ingredients for a truly tasty dish, just a few basic ingredients to go with your meat and you have the perfect meal to enjoy.
All you need is seasoning for the meat. I use: Kosher salt, pepper, onion flakes, rosemary, olive oil, blue cheese, and of course the NY strip steak.
How to Cook NY strip steak?
NY strip steak is super easy to cook under the grill and the little effort you have to put in is totally worth it.
You want to try to make sure you’re working with your strip steak at room temperature. Making sure you do this step will ensure you get the best flavor and texture out of your beef.
Once you’ve got your beef to room temperature, pat it dry with a paper towel to ensure any excess moisture has gone.
Now it’s time to season the strip steak with salt and pepper. We also add a few other seasonings to really bring the flavor out of the beef so rub on the onion flakes and rosemary too.
Now it’s time for the cooking part
Grilling NY strip steak
We’re going to cook this NY strip steal to medium-rare, as it comes out beautifully tender when cooked like this. However, you can cook your beef for longer if you prefer your beef more done than this.
To do this we need to set the grill to high heat and coat it with olive oil to stop any sticking. You can also use a cast iron skillet on the grill to cook your beef.
Place your steak on the grill for around 5 minutes and turn over and cook for around 4 more minutes for medium-rare. Its internal temperature should reach at least 135 F for medium-rare.
If you want it cooked more then you’ll need to cook it for around 6-7 minutes for medium and up to 10 minutes for well done.
Preparing your meat
Once you have cooked your steak take it off the grill. It’s good to leave it to rest and settle for a few minutes before slicing.
Once you’ve left it for a few minutes slice it thinly with a sharp knife. You then need to slice, then crumble the blue cheese over the top before serving and enjoying with your choice of sides.
I love serving it with fries and greens 🙂

NY strip steak cooking tips:
- One thing to consider is the thickness of your meat. Strip steaks will come in different thicknesses and sizes which will affect the cooking time, so you must take this into consideration when cooking and adjust accordingly.
- You want to make sure your steak is as dry as possible before rubbing your seasonings on and cooking as this will affect the end result. Excess moisture will stop your meat from cooking as nicely. So don’t skip the step where you pat it down with a paper towel.
- You can serve the steak with this luscious no cook Garlic Butter Sauce too!
- Leftover grilled steaks make the best salad, stir fry, pasta side dish and more!

What do you serve NY strip steak with?
There are lots of things you can enjoy with NY strip steak, but with this NY strip steak recipe, I recommend serving with salad and fries. It’s the perfect addition to this delicious recipe and are the most traditional sides to have with this dish.
Sirloin steak vs NY strip?
NY strip steaks are actually a cut of sirloin so you are essentially eating sirloin when you eat NY strip steak. However, when you choose a sirloin steak you aren’t necessarily eating strip steak as it’s only one part of the whole sirloin cut.
What’s great about choosing NY strip steak is that it is a slightly cheaper cut of meat but with the same great flavor of sirloin.
