These Air Fryer Lamb Chops are tasty, succulent, crispy and perfectly cooked in minutes! Air fryer lamb chops cook in under 12 minutes and deliver a beautifully browned crust with a tender, juicy center. The high circulating heat creates caramelization on the exterior while keeping the inside perfectly pink when cooked properly.

Ingredients You Need

Understanding Lamb Chops

Lamb chops come from different parts of the lamb, and this affects cook time and tenderness. Often called lamb rib chops, they come in these parts.

  • Loin chops: Small T bone style chops. Very tender. Cook quickly.
  • Rib chops: Often called “lamb lollipops.” Extremely tender and ideal for air frying.
  • Shoulder chops:  More affordable but slightly tougher. Benefit from marinade.

For air frying, rib and loin chops perform best due to their tenderness and even thickness.

Choosing the Best Lamb

Look for:

• Bright pink to deep red color
• Firm texture
• White fat (not yellow)
• Even thickness (about 1 inch ideal)

Thicker chops allow better doneness control. We always buy American Lamb.

Why American Lamb?

  • You want to make sure to buy American lamb because it’s unlike any other type of lamb. The breed and the way American lamb is raised make a HUGE difference in the taste of lamb you’re eating.
  • American lamb is fresher than imported of course, but most importantly, it tastes buttery and sweet compared to other types of lamb. It’s because the lamb is raised to the highest standards possible.
  • And even more, it’s raised with LOVE. When you buy local, you support families, dreams, long hours of hard work and you support communities. It means the world to do that!

Now let’s break down the recipe.

Lamb Chops Seasoning

Since this recipe has a bit of a Mexican flare from the poblano sauce, I’ve considered that in the spice mix.

  • Salt and Pepper
  • Chilli Powder and cayenne pepper
  • Onion Powder
  • Oregano
  • Oil: avocado oil or any high smoke point oil works great!
  • Optional: fresh herbs like fresh rosemary, thyme, fresh mint, parsley, all work good! Spice mix like za’atar  is great too.

That’s it! When making air fryer lamb chops, you don’t want chunks of marinade like garlic bits or anything that would burn. So a blend of spices and oil like this one is ideal. You can finish off with any wet sauce like our homemade chimichurri sauce.

Step By Step Air Fryer Lamb Chops 

Bring to Room Temperature

  1. Let chops sit out 20–30 minutes before cooking. Cold meat cooks unevenly.

Season Properly

  1. You’ll start by mixing the dry spice in a small bowl and liberally seasoning the lamb chops on both sides and drizzling them with oil.

Preheat the Air Fryer

  1. Preheat to 390°F (200°C). Preheating ensures immediate crust formation.

Arrange in a Single Layer

  1. Arrange the chops in a single layer in your air fryer basket. You can crowd them as long as they’re still in a single layer.

Cook / Air Fry

  1. Air fry for 8 minutes and then flip the chops.
  2. Continue air frying for 4-5 minutes more depending on how well done you want the lamb chops to be.

Seriously a quick, fool proof and forgiving way to start making more lamb chops!!

Make a Simple Poblano Sauce

  1. While the lamb chops are in the air fryer, you can quickly whip up the poblano sauce in your food processor.Ingredients for the poblano sauce on a board including poblano peppers, avcoado, jalapeno, lime juice, olive oil, cilantro, honey and salt
  2. Charring the poblanos is an optional step here, but it seriously elevated the flavor! It adds that smokey charred flavor to the sauce which is amazing.
  3. Add all those ingredients in a food processor until the sauce is formed! Simple and easy!

  5. You can use sour cream to make this into a creamy poblano sauce, and it will probably be thicker too. I use either, however today I had yogurt only.
  6. Store the poblano sauce in a container in your fridge for up to a week. That also means you can prepare the sauce in advance 🙂

Also Make Air Fryer Potatoes

The perfect pair to these air fryer lamb chops and poblano sauce is some crispy air fryer potatoes!

I love using small potatoes instead of cutting up large potatoes and making sure they’re the same size. It’s an extra step which you can skip by using small baby potatoes.

The one thing you want to make sure is that your potatoes are all approximately the same size.

Air Fryer Potatoes Seasoning

Similarly to the lamb chops here, we don’t want bits of garlic or onions or herbs that can burn in the air fryer. I use just a dry spice mix and oil. It adds so much flavor and you won’t miss out!

  • Salt and pepper
  • garlic powder
  • oregano
  • chilli powder
  • neutral tasting oil

How to Make Air Fryer Potatoes

  1. First of all you’ll season the potatoes in a large bowl.Seasoned potatoes in a bowl ready to air fry
  2. Then place the potatoes in your air fryer basket. Again, it’s very important to keep the potatoes in a single layer just like we did with the lamb chops. Seasoned potatoes in a single layer int he air fryer basket ready to be air fried
  3. Also important is to preheat the air fryer for two minutes before adding in the potatoes.
  4. Air fry the potatoes for 10 minutes, remove the air fryer basket and give it a snake. Then air fry again or an extra 8-10 minutes depending on the size of your potatoes.Crispy air fryer potatoes ready and cooked perfectly in the air fryer basket
  5. When they’re done, I love a finish of olive oil (really good quality olive oil so you can taste it) and a sprinkle of cilantro.

Expert Tips For Air Fryer Lamb Chops

  1. Choose Evenly Thick Chops. Thickness matters more than weight. Chops around 1 inch thick give you enough interior mass to control doneness. Thin chops overcook before they brown properly. If using mixed sizes, cook thicker ones slightly longer or cook in batches.
  2. Make sure you buy American lamb for utmost freshness and flavor. Ask for lamb loin chops.
  3. Pat Completely Dry Before Seasoning. Surface moisture prevents browning. Moisture must evaporate before caramelization begins. A dry surface allows immediate crust formation when the hot air hits the meat. This is one of the biggest upgrades you can make.
  4. Don’t Skip Preheating the air fryer. Placing lamb in a cold air fryer delays browning. Preheating ensures faster crust formation, better fat rendering and more even cooking. Think of it like preheating a skillet for searing.
  5. Season Generously and Simply. Lamb has strong natural flavor. Overly complex marinades mask it. 
  6. Season the lamb with a dry spice mixture and oil only. Avoid bits of food like garlic, onions or herbs that can burn in the air fryer. This is not a recipe where you ned to wait for marinated lamb.
  7. Flip Once for Even Browning. Although air fryers circulate heat, flipping halfway through improves crust on both sides, prevents uneven coloring and ensures even internal cooking.
  8. Use a Meat Thermometer. Lamb chops cook very quickly, just one extra minute can move them from medium rare to medium well. The USDA recommends an internal temperature of 145 degrees F for medium.
  9. Let The chops Rest. Rest at least 5 minutes.Resting allows muscle fibers to relax and reabsorb juices.Cutting immediately releases moisture and makes the chop appear dry.
  10. Avoid Overcrowding the air fryer. Air circulation creates browning. If chops touch, steam forms instead of crust. Cook in a single layer with space between each piece.
  11. Add Finishing Sauce After Cooking. This enhances flavor without softening the crust.

Lamb Chops Variations

  • Mediterranean Herb Lamb: oregano, lemon zest, parsley. Serve with yogurt sauce.
  • Garlic Butter Finish: After cooking, brush with melted garlic butter for richness.
  • Spiced Lamb Chops: cumin, coriander, paprika. This pairs well with rice bowls.
  • Air Fryer Lamb Lollipops: Use rib chops with exposed bone for elegant plating.

Why Did Lamb Chops Turned Out Dry

Possible causes for this include overcooking the lamb or using very lean chops. To avoid dry lamb chops, cook to 135 °F and rest properly.

Lamb Chops Did Not Brown 

This happens when you don’t preheat the air fryer or when the meat surface too wet. To avoid this, pat dry and preheat fully.

Why is the Lamb Burnt Outside, Raw Inside

This happens when you use too high temperature to cook, and use very thick chops. To avoid this, if you have thick chops,  air fry at a 375°F and extend cook time slightly.

Why do they have a Strong “Gamey” Flavor

  • Refrigerate up to 3 days.
  • To reheat: Air fry at 350°F for 2–3 minutes.
  • Avoid microwaving, it toughens meat.
  • Freezing is not ideal for already cooked chops.

Ingredients

Lamb

  • 4 pounds lamb chops American lamb, trimmed to your taste.
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chilli powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon oregano
  • 1 tablespoon oil

Potatoes

  • 2 pound bag baby potatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chilli powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 2 tablespoons oil

Poblano Sauce:

  • 3 poblano peppers charred
  • 1 jalapeno pepper charred
  • 2 1/2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1 avocado
  • 2/3 cup cilantro
  • 3 tablespoons yogurt or sour cream
  • 1 tablespoon honey

Serve:

  • Lime slices
  • cilantro

Instructions

  1. Start by making the air fryer potatoes: season the potatoes in a large bowl with all the ingredients.

  3. Add the potatoes in a single layer in the air fryer and air fry for 10 minutes. Remove the air fryer basket and give it a shake.

  4. Return the potatoes back to air fry for an extra 6-10 minutes depending on the size of the potatoes.
  5. When they’re done, sprinkle some cilantro and place them on the serving plate.

  6. Keep the air fryer preheated at 400 degrees.
  7. Season the lamb chops generously with the seasoning and oil on both sides. Arrange the chops in a single layer on your air fryer basket.
