This spicy tuna crispy rice recipe is made so popular by upscale sushi restaurants and made famous worldwide by Nobu. It’s a bite full of flavor and texture contrasts like, warm crispy rice, cool tender tuna, creamy Spicy Mayo bright herbs and subtle heat.

What Is Spicy Tuna Crispy Rice?

Spicy Tuna Crispy Rice is a sushi inspired appetizer consisting of compact blocks of sushi rice that are pan fried into crispy rice and golden. Then they’re topped with a spicy tuna mixture made from raw sushi grade tuna, Japanese mayonnaise, sriracha or chili paste, soy sauce, and sesame oil.

It has a crispy exterior with a chewy center, a rich and creamy spicy tuna topping, and some balanced heat with restaurant look and appeal, similar to Nobu restaurants.

Spicy Tuna Crispy Rice is a modern Japanese American creation rather than a traditional dish from Japan. It was inspired by Japanese sushi techniques but developed in contemporary fine dining restaurants, particularly in the United States, where chefs began experimenting with contrasting textures and bold flavors.

The dish became internationally famous through Nobu, the acclaimed restaurant founded by Nobu Matsuhisa and Robert De Niro. Nobu’s version pairs crispy sushi rice with spicy tuna and thin jalapeño slices, creating a signature appetizer that has been widely imitated by sushi restaurants around the world.

Ingredients You’ll Need

Ingredients to make spicy tuna crispy rice on a board with small bowls

Seasoned Sushi Rice

Short grain Japanese rice is essential because of its high starch content, which creates the characteristic sticky texture needed to hold together when pressed and fried. We love flavoring the sushi with some furikake, but it’s optional.

Long grain rice lacks sufficient starch and will crumble. Fllow the guide above for perfect sushi rice.

Crispy Rice

Crispy rice cakes or blocks are made from the sushi rice above. You can pan fry it neutral vegetable oil such as avocado, canola, grapeseed, or sunflower oil. Or you can air fry or bake them until golden brown.

Sashimi or Sushi Grade Ahi Tuna

The star ingredient. Fresh raw tuna should be firm, bright, and clean smelling. Bluefin, yellowfin, and ahi tuna are all excellent choices.

Japanese Mayonnaise

Adds richness and creaminess. Kewpie mayonnaise  preferred for its deeper umami flavor and silky texture. You can use our Spicy Mayo guide which includes Sriracha, Soy sauce or tamari.

Japanese Kewpie is preferred ober American mayo because it uses egg yolks and rice vinegar, resulting in richer flavor.

Sesame Oil (optional)

A small amount contributes nutty aroma and complexity.

Lime or Yuzu Juice

Brightens the tuna mixture and balances richness.

Avocado

Adds buttery texture and mellow flavor.

Jalapeño

Provides crisp freshness and a sharp spicy finish.

Sesame Seeds

Contribute subtle nuttiness and visual appeal.

Chives or Scallions

Add mild onion flavor and color.

Optional Finishing Sauces

Ponzu, eel sauce, spicy mayo, or soy glaze can elevate the taste.

How to Choose Sushi Grade Tuna

Purchase from a reputable fish market or Japanese grocery that explicitly labels tuna as sashimi grade or suitable for raw consumption. Look for:

  • Bright ruby red color
  • Firm texture
  • Fresh ocean scent
  • Minimal liquid in packaging

Where to Shop

Most ingredients are available at Asian supermarkets, specialty seafood stores, and large grocery stores.

Why Raw Tuna and Mayonnaise Work So Well

The natural lean texture of tuna is enhanced by the emulsified richness of mayonnaise, creating a luxurious mouthfeel.

How to Make Spicy Tuna Crispy Rice

Prepare the Crispy Rice

crispy rice prepared and ready on a large plate

  1. Start with freshly cooked, seasoned sushi rice. Press it into a shallow tray or mold and chill until firm, this helps the rice hold the shape when fried.
  2. Once chilled, cut the compacted rice into small rectangles or squares.
  3. Add neutral oil to a skillet or bake, or air fry the rice blocks until golden and brown.

Chop The Tuna and Prepare the Filling

Why Hand Diced Tuna Is Superior

  • Oil wasn’t hot enough when cooking the crispy rice.
  • Rice surface was too wet before cooking.
  • Pan was overcrowded and this dropped the oil temperature

Why Is the Tuna Mixture Too Watery

  • Tuna was over mixed and fibres got slightly mushed
  • Excess citrus or soy was added to the fish

What if The Flavor Feels Flat

  • It needs more salt or soy balance
  • Add lime or yuzu for brightness
  • Increase sesame oil slightly for aroma
