The inspiration for the recipe came from our visits to Olive Garden and how the kids enjoyed it there. Once we tried it, I had to make an olive garden chicken gnocchi soup copycat recipe. I really wanted to enjoy this in the comfort of my own home.

- olive oil– This is used in conjunction with the butter to stabilize the soup and stop it from browning too quickly and it keeps the soup a lovely golden color. It must be used in conjunction with the butter (don’t omit it)
- onion
- celery stalks
- garlic cloves
- Fresh thyme (optional) or 1 teaspoon dried oregano
- all-purpose flour – thickens the soup
- shredded carrots – Adds some texture and color – May use store bought pre shredded like I did today.
- chicken stock/ Chicken broth (or veggie stock) – Adds much of the warming flavor
- Rotisserie chicken
- heavy cream (at least 18% fat)
- Gnoccchi –Potato gnocchi is the classic one, however feel free to use sweet potato gnocchi for a pleasant twist! Also this recipe works well with fresh or frozen dumplings.
- fresh spinach leaves roughly chopped

Make Chicken and Gnocchi Soup Recipe:
To make life and cooking easier it’s always a good idea to prep all your food before you start cooking.
Start this recipe by adding butter and oil in a large pan using medium heat. While the butter is melting down, mix the celery and onions together. Once the butter is fully melted add the onion and celery to the pan and saute. Add a pinch of salt.
It’s really important to saute the onions down properly so they get soft enough. Don’t rush this step. You will know when they are done if they are light yellow or golden and slightly see-through.
The next step is to add the flour to the onion celery mix and stir it in. Saute this mix for about 3 more minutes until the flour becomes slightly toasted and it will take a slightly golden hue.
Now add the shredded carrots to the pot and the thyme or oregano if you want to, and saute these for another minute. You can now add the chicken stock/broth and bring everything to a boil. The addition of celery carrots will bring both flavor and color to the recipe.
That’s the base of your soup done. Now it’s time to add the good stuff. Add the chicken and gnocchi to the pot and keep the pot boiling for another 15-20 minutes – until the gnocchi is tender.
The recipe is nearly done. The final step is to add the fresh spinach and cream. . After you have added the final ingredients reduce heat on the stove and cook on low. Let it all cook together for just another 2-3 minutes and switch off your stove.

Recipe came out ok..It was ultimately a little bland due to lack of salt. I’m not a bid sodium guy, but 1 teaspoon just wasn’t enough. Also your recipe failed when to add the garlic. When I was at the step to add the broth and garlic wasn’t in yet, I figured it was an oversight, so I added it just before. I think next time I would add it with the butter and olive oil.
Next time I’m also going to cut down on the cream by 1/2 initially and maybe add another 1/4. I’m sure that’s what tamed the flavors alot.
