If you’re a sushi lover, you need this Sushi Rice guide in your life! It works for all types of sushi, and you’ll be surprised how easy it is to make! Unlike plain steamed rice, sushi rice is seasoned, sticky, and perfectly balanced so it can hold shape and enhance the flavor of sushi ingredients.

While we have shown quick ways to make sushi rice in our viral Sushi Burrito, today we’re sharing a detailed guide. Everything you need to know to perfect it at home, all the troubleshooting and so many mistakes to avoid that we went through until we learned.

While we don’t make sushi all the time at home, we still love to make a good sushi rice for a few dishes aside from our all time favorite Sushi Burrito. These include Sushi Bake, Poke Bowl, Sushi Bowl and Crab Sushi.

What Is Sushi Rice?

Sushi rice, also called sushi meshi or sumeshi in Japanese is short grain or medium grain rice that has been cooked, seasoned with rice vinegar, sugar, and salt, and cooled. This seasoning gives it the signature sweet tangy flavor and sticky texture that makes it ideal for forming sushi rolls, nigiri, rice bowls, and more.

It’s different from plain steamed rice because of this seasoning step, which also helps the rice grains cling together without becoming mushy. It’s basically short grain rice with a sticky but not mushy texture, a slightly sweet taste with balanced acidity and glossy finish.

Why Perfect Sushi Rice Matters

Fresh ingredients like fish and vegetables are important, but if the rice is too mushy, too dry, or unseasoned, the whole sushi experience falls apart. You need a great sushi rice that forms and holds shape in rolls and nigiri with a balanced sweetness and acidity. It has to be glossy with grains that aren’t sticky in a clumpy way.

Sushi rice should taste great at room temperature, not cold or hot like usual rice dishes.

Ingredients You Need

  • Short grain rice: Japanese or Calrose rice (more on that below) is a must, the correct type of rice provides structure.
  • Water: To cook the rice
  • Unseasoned Rice vinegar: provides brightness and preservation.
  • Sugar: balances acidity.
  • Salt: enhances overall flavor.
  • Optional: Kombu (for subtle umami)
  • Furikake: Also optional to finish off the flavor.

What Type of Rice is Used for Sushi?

  • Japanese Short Grain Rice (Best Choice): It has a high starch content (amylopectin) which creates the sticky texture needed for shaping.
  • Calrose Rice (Common U.S. Substitute): It has a medium grain, widely used and acceptable for home cooks.
  • Long Grain Rice: Not a good choice because it’s too dry and separates when cooked.
  • Jasmine Rice: Also not a good choice. While it is aromatic, it has a wrong texture and can’t be used here.

How to Make Sushi Rice

Rinse the Rice

Rinse short grain rice under cool water until the water runs clear. You can do this in a sieve and observe the water. This removes excess surface starch so the grains don’t clump excessively.

Soak the Rice

Soak the rinsed rice in a large bowl briefly. This helps the grains absorb water evenly and cook more consistently.

Cook the Rice

Use a rice cooker or a pot with a tight lid and add the rice with enough cups of cold water. cook until the rice is tender and water fully absorbed on the stove. You can add a piece of kombu here for umamu. Start with high heat until the water boils and then drop the heat to low until the cooking water is absorbed.

Stovetop or rice cooker both work. Avoid lifting lid mid way through cooking.

Rest Covered

Let steam finish the cooking process.

Prepare Seasoning

Warm vinegar mixture gently to dissolve sugar and salt in a small saucepan. Do not boil.

Combine rice vinegar with sugar and salt while the rice cooks. Heat gently until the sugar dissolves.

Season the Rice

When the rice is cooked, it should look be soft and grains well cooked.

Transfer hot rice to a large shallow mixing bowl and gently fold in the seasoned vinegar mixture. If you have a rice paddle use it, otherwise use a spatula. Don’t smash the grains, rather use a slicing/folding motion to keep them separate while evenly coating them.

Cool to Room Temperature

Traditionally, sushi rice is fanned while mixing to cool faster and develop shine. This is a technique where the fan is turned on gently while folding. Do not refrigerate immediately.

Pro Tips for Sushi Rice

  1. Rinse the rice until the water runs clear to prevent gummy, pasty rice with oversized clumps.
  2. Use short grain rice for optimum texture.
  3. Do not overcook the rice.
  4. Season while still warm so the flavors penetrate well.
  5. When adding the seasoning to the rice, make sure to fold it in not mash it in. The vinegar mixture should be distributed gently so grains stay intact and glossy.
  6. Cool the rice to room temperature before using. If the rice is too hot, it will break the rolls, while if it’s too cold, it won;t adhere properly.
  7. Keep covered with damp towel until ready to use.

Sushi rice takes about 45–60 minutes from start to finish.

It’s broken down as follows.

  • Rinse and soak: 10–15 minutes
  • Cook: 20 minutes
  • Rest: 8-10 minutes
  • Season and cool: 10 minutes
  • Total time: about 45–60 minutes

Storage & Make Ahead Guide

While you can sushi rice recipe ahead of time, it’s always best eaten the same day. Store leftovers at room temperature covered for several hours. If you’re storing the rice in the refrigerator, it will harden due to starch retrogradation. In that case you need to reheat gently with damp towel in microwave.
