I don’t know about you guys, but after Thanksgiving, the last thing I ever wanna eat is anything related to my Thanksgiving menu! lol.
So all that leftover turkey and all the many leftover turkey recipes I can make, I’d rather make something different. Something that does NOT taste like Thanksgiving turkey.
Something that’s fresh, zesty, crunchy, not heavy, yet utterly delicious, and above all, uses all my left over turkey!
So while I’m still eating leftover turkey, it feels nothing like leftover food. So forget all your leftover turkey recipes which call for more gravy, cranberry sauces, squash, melted cheese, turkey soups, etc..
This Mediterranean turkey sandwich is inspired from my favorite Succulent Dry Brined Turkey Breast recipe and video which I’ve shared last week. Be sure to check it out—Thanksgiving or not, I think everyone needs a good go to turkey breast recipe.
Why This Mediterranean Turkey Sandwich
First of all, it’s got the Mediterranean flare. To me, that just screams fresh, simple and vibrant flavors.
I know most of us now have probably had quite enough of turkey everything. And while I miss Thanksgiving and Friendsgiving turkey all year long, I seriously do not miss it a day after my big meal!
So maybe you’ve been used to all the leftover turkey recipes like soups, salads, turkey pot pies, you name it. I’ve found that going the opposite way works best for my turkey cravings.
This turkey sandwich is purely what it is: a turkey sandwich. So forget Thanksgiving with all its glory, today we’re all about the turkey.
It’s certainly not a Fall recipe, you can make this turkey sandwich all year long! Thanksgiving season or not!
Another thing I love about this recipe is that it’s wonderful when it’s cold. So think about a perfect lunch or light dinner. And even more, this means it’s perfect prepared a day in advance too!
Finally, my secret flavor here is a slather of black olive tapenade over the sandwich buns—OMG! So delicious!
How to Make this Mediterranean Turkey Sandwich
Start off with you bread. I’ve picked up some flat whole wheat pita breads, but similarly any type of bread would work. I’ve just really been hooked on these buns for a while and couldn’t resist using them!!
The tapenade. Ok, while I rave about my Succulent Dry Brined Turkey Breast, I have to admit, the bulk of flavor for the turkey sandwich is from a nice spread of black olive tapenade.
Use a homemade version if you have one or use a store bought spread that you really love.
Then simply pile up your Greek salad flavors on the sandwich. And really anything here you can add on or swap is absolutely ok.
First of all, I layers some spinach, then cucumbers, tomatoes, sliced avocados, red onions, the turkey, feta cheese, pomegranate arils and some sliced green chillies.
Oh and one last thing, you can’t forget that sprinkle of salt and pepper because it’s almost always forgotten in sandwiches.
How easy was that?! So simple, easy and delicious! A real turkey sandwich that tastes so good all seasons! And specially after Thanksgiving, just when you feel you had enough turkey, you’d still crave this turkey sandwich!
Tips for Success:
This is such a straightforward turkey sandwich and feel free to add on any ingredients like fresh sliced apples, peaches or berries.
Use a really good quality olive tapenade spread. This is where the bulk of the flavor is.
The turkey sandwich can be made 2 days in advance and kept in the refrigerator until ready to serve.
If you want a creamier sandwich, add some ranch dressing or mayo to the olive tapenade, it still tastes amazing!
Another things to keep in mind is that any type of turkey works well here. So if it’s not Thanksgiving season, you can use turkey legs shredded, deli turkey or any cooked turkey breast.
My preference is to serve this sandwich cold, but if you feel like a warm turkey sandwich, you may want to remove the cucumbers and warm it up. Even more, try it as a panini sandwich!

Mediterranean Turkey Sandwich
Ingredients
- 4 pita buns whole wheat or your favorite
- 1/3 cup olive tapenade green or black olive or a mixture
- 1 cup spinach leaves
- 1 cup cucumbers sliced
- 2 tomatoes sliced
- 1/2 onion red onions, sliced
- 2 avocados pitted and sliced
- 1 pound turkey breast cooked
- 1/2 cup feta cheese crumbled
- 2 green chillies sliced
- salt and pepper to taste
Instructions

To make your turkey sandwiches, spread about a tablespoon of the olive tapenade over the bottom of each pita bun. Spread a half a tablespoon over the top bun.

Start piling up your toppings and season the sandwich with salt and pepper.

Serve or keep in the fridge for the next day!

I have to disagree – I love Thanksgiving food so much that I’m sad when the leftovers are all gone. But, I must say, I love to use up the leftovers in different ways. I love your take on the turkey sandwich using those pitas breads. We buy those breads regularly, but I’ve never made regular sandwiches with them. Thanks for the idea!
