Grill Foil Packets with Lamb and Potatoes

FOIL PACKETS

  • It’s like a one pan meal, only made in foil—not a pan.
  • You can flavor it endlessly.

  • It’s a very versatile concept, where you can add and swap ingredients around. Think more veggies, spice, marinades and more!
  • They cook either on the grill or in an oven, so you can enjoy them all year long!
  • If you want to make a fun gathering at your backyard, have the foil, lamb, potatoes, onions and garlic chopped up and have a selection of other veggies, lemon slices, salad dressings, dried fruits and more options ready. That way your friends can each assemble their own!

Why I love American Lamb?

I’ve mentioned this before and I’ll forever say—American lamb is the best tasting and highest quality lamb you’ll ever taste and enjoy!

For today’s recipe, I’m using boneless lamb shoulder chunks. This cut is beautifully marbled, tender and delicious!

How Do you Make a Foil Packet for Grilling?

Super easy, you’ll cut the foil into 9 by 13 inch sheets (it’s easy to measure because it’s a similar measurement to the baking pan). Arrange the seasoned lamb and potatoes in the centre and fold the foil packets over it to cover them completely.

HOW TO GRILL FOIL PACKETS

In a large bowl, add the lamb and potatoes.

Make sure the size of your potatoes is similar to the size of lamb chunks. This is crucial to have your potatoes cook all the way through with the lamb.

To the bowl, add in the garlic, onions, fresh rosemary and seasoning.

Add in olive oil and toss everything in the same bowl.

Divide the lamb and potatoes mixture between 4 sheets of foil.

Wrap each foil into a packet and pinch the edges to seal.

Place the foil packets on the grill or in the oven for 15-20 minutes.

Unwrap the grill foil packets slowly (careful they’re super hot and have steam when they’re straight out of the grill/oven).

Top the lamb and potatoes with grated parmesan cheese and extra rosemary sprigs.

Serve and ENJOY!

FOIL PACKETS TIPS

  • Make sure the lamb chunks and potatoes are approximately the same size.
  • Season the lamb and potatoes together in the same bowl ( garlic, onion, herbs, lemon juice, and your favorite spices).
  • Feel free to add extra veggies here: corn, red pepper chunks, green beans, carrots, and your favorite!
  • Cut the foil into about 9 by 13 inch sheets. If you have a pan of this size, it would be easy to use it as a guide.
  • Divide the mixture and wrap each foil while sealing the edges.
  • This allows the lamb to cook to medium and the potatoes to be fully cooked. However if you prefer your lamb on the rare die, the simply cut them slightly bigger than the potatoes. Likewise you can cut the potatoes into smaller sizes while keeping the lamb at the same size.
  • For medium rare lamb, cook the packets for 10-12 minutes and check on them.

Grill Foil Packets with Lamb and Potatoes

Don’t let the summer go by without making those Grill Foil Packets with Lamb and Potatoes on the BBQ! They’re perfect on the grill or even in the oven—so if you miss BBQ season, make them all year long in your oven!

Ingredients

  • 1.5 pounds American Lamb shoulder -deboned and cut into an inch and a half chunks you can also use pre-cubed lamb stew meat.
  • 4 cups of chopped potatoes or baby potatoes
  • 1 red onion finely diced
  • 5 cloves of garlic minced
  • 1 teaspoon coarse salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh rosemary leaves chopped
  • 1/4 cup olive oil

Garnish

  • 1/4 cup grated Parmesan cheese
  • Fresh rosemary sprigs
  • chilli flakes optional
  • Fresh baby tomatoes optional

Instructions

  1. Preheat the grill at medium heat or the oven at 420 degrees F.
  2. Cut out 4-5 foil sheets approximately 9 by 13 inch size.
  3. In a large bowl, toss the lamb, potatoes and remaining ingredients.
  4. Divide the lamb potato mixture among the 4 foil sheets and fold over the edges of the foil to form a packet.
  5. Place the packets on the grill or in the oven on a baking sheet for 15-20 minutes until cooked through.
  6. Serve with your favorite garnishes and enjoy!

    This dish looks delicious and nutritious. I really like it. I have tried it many times but still not as good as today. I follow your recipe and I have a delicious meal. May I ask if I add more potatoes to this dish is it okay?
