Birria Quesadillas

Here's to make some fantastic Birria Quesadillas! Birria meat, birria stew and a delicious cheesy quesadilla all in one! The best birria recipe!

  1. Have your Birria meat and Consommé prepared

    Ingredients to make birria quesadillas including: tortillas, birria meat, birria stew, cheese, cilantro, white onions chopped, jalapenos
  2. Start by heating the tortillas in a cast iron or heavy skillet with a tablespoon of oil .

  3. Brush the tortilla with the Consommé

    A hand slathering the tortillas with the birria stew to cover it and flavor it really well on the pan
  4. Flip the tortilla and brush again. Then add in the cheese to cover half the tortilla.

  5. Now on top of the cheese, add in the meat and sauce.

  6. fold over the half of the tortilla that doesn’t have the cheese or meat on it to make a half moon shape.

  7. Press down the tortilla with a spatula to melt the cheese and make the shape stick.

    Tortillas is now folded in half to look like a quessadilla and then flipped to have a nice golden color on both sides
  8. Flip the tortilla to cook on the other side for a beautiful golden sear.

  9. Remove from the heat and repeat with the remaining tortillas to make birria quesadillas.

  10. Cut each into half and top with the onions, jalapenos and cilantro.

Tips to Get the Perfect Birria Quesadilla

  1. ALWAYS have a batch of Birria Tacos or Lamb Birria in your freezer! They make wonders! And the recipe makes plenty so you'll have enough :)
  2. Don't be afraid to experiment and add your twist to the dish. Add some sautéed mushrooms, peppers or corn maybe.
  3. make sure the tortillas are room temperature so they're easy to fold.
  4. To ensure your tortilla doesn't get soggy with all the filling, don't forget to heat it before adding the ingredients. A quick warm-up in the pan will do the trick.
  5. Finally, there is no better way to ensure a perfectly crispy quesadilla than oiling the pan before adding the cheese and toppings. It will create an amazing crunchy texture!

Is Birria Goat Meat?

Yes, Birria is traditionally  and originally made with goat meat. However, as we mentioned earlier, you can also use beef, lamb and chicken.
