Ingredients

Veal

  • 2 veal scallopini cutlets pounded
  • 1/8 teaspoon salt and pepper
  • 1/4 cup oil sunflower oil, light olive oil, avocado oil or any high smoking point point

Breading

  • 1/2 cup flour seasoned with salt, pepper and oregano
  • 1 egg beaten and seasoned with salt, pepper and oregano
  • 3/4 cup panko breadcrumbs seasoned with salt, pepper and oregano

Sauce

  • 1- 11/2 cup marinara sauce homemade or your favorite storebought
  • 2 Tablespoons basil pesto
  • 1/2 cup Mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 tablespoon Fresh basil

Instructions

  1. Start by Preheating your oven to 400 degrees F.

  2. Prepare the veal by seasoning it lightly with salt and pepper on both sides.

  3. Have three shallow plates for the breading station ready and add flour to one, eggs to the second and breadcrumbs to the third. Season each plate with salt, pepper and oregano. Garlic powder is optional.

  4. Now take the veal, one piece at a time and start the breading process. Place the veal cutlet into the flour plate.

  5. Toss well and coat on both sides, but make sure to shake off excess flour and ten place the coated cutlet into the egg plate.

  6. Toss well and place the cutlet now into the breadcrumbs plate. Press down the veal cutlet to make sure it's well coated in breadcrumbs on both sides.

  7. Preheat a skillet over medium high heat with the oil. Place the breaded veal cutlet into the hot oil and pan fry for 3 minutes or so per side.

  8. You want the veal to be golden and crispy, but not necessarily cooked through as it will continue cooking in the oven.

  9. Drain the golden cutlets on a kitchen towel to remove excess oil.

  10. Now take your 9 by 13 inch oven safe dish and place nearly 1 cup of marinara sauce.

  11. Lay the golden veal cutlets over the marinara sauce.

  12. Smother some basil pesto over the veal for extra flavor (optional).

  13. Now top with the remaining marinara sauce, cheeses, tomatoes and more dollops of basil pesto. bake the veal parmesan for 20-25 minutes.

  14. It's ready when the cheese has melted, the sauce has been bubbling to cook and infuse the veal and the veal has cooked trough.

  • Use Milk fed veal if you're able to find it, it's more tender, lean and sweeter.
  • You should use pounded veal cutlets.

  • Pan fry the breaded cutlets for 3 mins or so until golden but not necessarily cooked through as it will cook in the oven.
