Ingredients

Salmon:

  • 4 salmon fillets
  • ¼ cup cChosen Foods Garden Goddess Dressing

Chickpea Salad

  • 1 can chickpeas drained
  • cup fresh herbs dill and parsley
  • 1 lemon zest
  • ½ cup tomatoes diced
  • 2 scallions minced
  • 3 tablespoons Chosen Foods Garden Goddess Dressing.

Grilled veggies

  • Sweet peppers
  • Mushrooms
  • Tomatoes
  • Lemons
  • 2 tablespoons Chosen Foods Garden Goddess Dressing

To serve:

  • 3 cups arugula
  • Avocados sliced
  • 2 cups quinoa cooked
  • Fresh tomatoes

Instructions

  1. Brush both sides of the salmon fillets with the Chosen Foods Dressing.

  2. Preheat a stove top grill or the BBQ grill to medium high.
  3. Spray generously the cooking surfaces with Chosen Foods Avocado Oil Cooking Spray.

  4. Place the salmon fillets on the hot surface and cook for 4 minutes.

  5. Toss the veggies with the dressing and grill with the salmon.

  6. Flip and cook for 5 more minutes until an internal temperature of 145 degrees F is reached.
  7. Remove from the grill and immediately drizzle lightly with more Chosen Foods Dressing.

  8. To make the chickpea salad, toss all ingredients together in a large bowl and set aside.

  9. Serve as a main course with arugula and the chickpea salad.
  10. Leftover lunch bowls are great served with the cooked quinoa or grain the next day.
  11. Always add an extra drizzle of Garden Goddess Dressing just before serving.

Grilled Salmon Recipe Tips & FAQ's

  1. Always buy fresh salmon
  2. Using skin on or skin off is totally your choice.
  3. Buy a selection of Chosen Foods House Dressings to use as marinades for this recipe and as a finishing sauce.
  4. Spraying the stovetop grill or BBQ grill with avocado oil is best to avoid sticking.
  5. Make sure to brush the salmon on both sides with the dressing and avoid over soaking the salmon in sauce.
  6. Don’t flip the salmon too soon once placed on the grill. Allow at least 3-4 minutes of cooking before doing so.
  7. Once cooked, and while the salmon is still hot, immediately drizzle a light coating of the Chosen Foods dressings to infuse more flavor and moistness into the salmon.
  8. Keep the cooked salmon in the refrigerator for at least 3 days.

How long does it take to grill salmon?
