Ingredients

  • 1 tablespoon unsalted butter
  • 1/2 cup peanut butter (all-natural is best, crunchy is best for the extra crunch)
  • 1/3 cup light brown sugar
  • 1 egg
  • 1 pinch salt
  • 1 teaspoon vanilla
  • 1/3 cup oats (gluten-free if needed)
  • 2 tablespoons ground flax seeds (or whole wheat flour if not gluten free)
  • 1/4 teaspoon baking soda
  • 1/4 cup chocolate chips
  • 2 tablespoons raisins

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, whisk together the butter, peanut butter, sugar, and egg until smooth.
  3. Add in the pinch of salt and whisk well.
  4. Add the oats, flax powder and baking soda and use a rubber spatula to mix them in the dough.
  5. Then add the chocolate chips, raisins and extra nuts if you prefer. Mix them well.
  6. Take a tablespoon and scoop out tablespoons of cookie dough on to a parchment lined baking sheet and place them an inch apart.
  7. Bake the cookies for 10-12 minutes (depending on the size of your dough) until the edges are firm but the centre of the cookies are still very soft.
  8. Allow the cookies to cool on the baking sheet for 2 minutes and then cool on a wore rack.
