Ingredients

Waffles:

  • 4 waffles Eggo Nutri grain
  • 2 tablespoons butter unsalted and divided between all waffles
  • 4 eggs large
  • 1/4 teaspoon salt pink Himalayan
  • 1/4 teaspoon black pepper

Toppings:

  • 1/2 cup Pico De Gallo homemade or store-bought
  • 1/2 cup Guacamole Homemade or Store-bought
  • 2 tablespoons parsley leaves minced

Serving:

  • Jellies and Jams

Instructions

  1. Preheat a nonstick skillet over medium heat.
  2. Add half a tablespoon of butter.
  3. Take a 1.5 inch or 2 inch cookie cutter and cut out the center of each Eggo waffle. Keep the centers to toast and use later with jellies and jams.
  4. Put one or two waffles at a time depending on the size of your skillet and toast in the butter for less than a minute. Then flip the waffle and add in the egg right in the hole.
  5. Cover the skillet and allow the eggs to cook to the doneness you prefer (anywhere from 2-4 minutes).
  6. Uncover the skillet, season the eggs with salt and pepper. Serve right away with toppings.
  7. Toast the waffle centers and use them to dip/scoop jellies and jams.
  8. Enjoy!

Recipe Notes

Start with quality waffles such as Eggo Nutri Grain. Use a 1.5 inch to 2 inch cookie cutter, any shape works. Make sure you use large eggs, not bigger since the eggs in a hole are supposed to fit exactly in to the center of the waffles. Cover the skillet as soon as you put the eggs in the center so that they start to cook without browning the waffle bottoms too much. Keep an eye on the eggs because everyone likes them differently. Use the cut out waffle centers to scoop up jam! Remember to toast them first in a toaster. Serve the eggs in a hole right away with different toppings. You can rewarm the eggs in a hole in the oven, but keep in mind the eggs will continue cooking.
