Ingredients

  • 4 pita buns whole wheat or your favorite
  • 1/3 cup olive tapenade green or black olive or a mixture
  • 1 cup spinach leaves
  • 1 cup cucumbers sliced
  • 2 tomatoes sliced
  • 1/2 onion red onions, sliced
  • 2 avocados pitted and sliced
  • 1 pound turkey breast cooked
  • 1/2 cup feta cheese crumbled
  • 2 green chillies sliced
  • salt and pepper to taste

Instructions

  1. To make your turkey sandwiches, spread about a tablespoon of the olive tapenade over the bottom of each pita bun. Spread a half a tablespoon over the top bun.
  2. Start piling up your toppings and season the sandwich with salt and pepper.
  3. Serve or keep in the fridge for the next day!
  4. Enjoy :)

Recipe Notes

This is such a straightforward turkey sandwich and feel free to add on any ingredients like fresh sliced apples, peaches or berries. Use a really good quality olive tapenade spread. This is where the bulk of the flavor is. The turkey sandwich can be made 2 days in advance and kept in the refrigerator until ready to serve. If you want a creamier sandwich, add some ranch dressing or mayo to the olive tapenade, it still tastes amazing! Another things to keep in mind is that any type of turkey works well here. So if it’s not Thanksgiving season, you can use turkey legs shredded, deli turkey or any cooked turkey breast. My preference is to serve this sandwich cold, but if you feel like a warm turkey sandwich, you may want to remove the cucumbers and warm it up. Even more, try it as a panini sandwich
