It’s a big bowl of winter fruits, some chickpeas, spinach, avocados and a sweet orange dressing. Sometimes that’s all you need on winter nights to make them feel a bit more easier. Ingredients

Winter Goodness Bowls:

  • 2 cups of spinach
  • 1 apple sliced
  • 1 persimmon thinly sliced
  • 5 figs quartered
  • 1 cup of pomegranate arils
  • 2 avocados sliced
  • 2 cups of chickpeas

Orange dressing:

  • 1 teaspoon of mustard
  • pinch of salt
  • 1/2 teaspoon of dried oregano
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoons of orange juice
  • 2 tablespoons of orange marmalade
  • 1/4 cup of olive oil

Instructions

  1. Assemble your bowls by arranging the ingredients between two different bowls.
  2. Make the dressing by mixing all ingredients in a container with a lid. Seal the lid and shake the container vigorously until all dressing is blended together. Pour over the bowls and serve! Enjoy :)
