Healthier Nachos Recipe with Mango Avocado Salsa

Ingredients

  • 2 bags of Harvest Snap Peas (your favorite—I used Mango Chile Lime and Original)
  • 1 cup of shredded cheese (your favorite—I used marbled)
  • 1/2 cup of diced onions
  • 1/2 cup of diced tomatoes
  • 1/4 cup of sliced jalapeños
  • 1/2 cup of diced avocados

Mango Avocado Salsa:

  • 2 scalions
  • 1 jalapeno
  • 1/2 cup cilantro leaves
  • 1/3 cup of parsley leaves
  • 1 garlic clove
  • 1/4 teaspoon of salt
  • 1 tablespoon of honey
  • juice of 1 big lime
  • 2 tablespoons of olive oil
  • 1 large mango cubed
  • 1 avocado cubed

Lime Sour Cream:

  • 1 cup of sour cream
  • juice of 1/2 a lime
  • pinch of salt
  • 1 tablespoon of chopped cilantro leaves

Instructions

  1. In an oven safe platter, scatter the harvest snap peas. Then top them with your favorite cheese. Place the platter in a preheated 400 degree oven for 10 minutes until the cheese has melted. Alternatively you can microwave the platter for 3 minutes.
  2. In the meantime, make the salsa. Place the scallions, jalapeño, cilantro, parsley and garlic in a food process for pulse until they’re finely chopped. Then add the salt, honey, lime, olive oil and pulse a few times until everything is blended. Add the mango and avocado and pulse just a few times until you get the consistency of salsa you prefer. You can make it as chunky or smooth as you prefer, but be careful not to process it too much. Just pulse it and keep an eye on it with every pulse.
  3. In a bowl mix all the sour cream sauce together and set aside.
  4. Once the cheese has melted, start assembling your nachos recipe.
  5. Top the Harvest Snaps with salsa, and all other toppings you like. And drizzle a cool sour cream sauce over. Enjoy right away! :)
