Ingredients

  • 4 Pita Breads with pocket
  • 1/2 cup tahini sauce
  • 1 cup arugula
  • 12 falafels
  • 1/2 cup tabouli salad
  • 1 red onion sliced small onion
  • 3 sprigs fresh mint
  • 1 lemon juiced

Instructions

  1. Start by preparing your pita breads. Open up your pita bread without going all the way through.
  2. Spread a layer of tahini sauce over the pita, top that with arugula and 3 falafels per sandwich.
  3. Use a fork to crush the falafel open over the sandwich. This allows the falafel to soak up all the flavors and toppings of the sandwich.
  4. Pile up the falafel with tabouli salad, red onions, fresh mint and finish off with a squeeze of lemon juice.
  5. Roll the pita bread into a sandwich or a wrap and enjoy.

Recipe Notes

TIPS FOR THE BEST SANDWICH

  • Use a Pita bread that has a pocket so you can open it up and stuff it. Avoid using thick pita breads because they don’t roll up easily nor do they hold up the filing easily.

  • If you can’t do either for the tabouli, than substitute it with lots of freshly chopped parsley, tomatoes and extra lemon juice.

  • If you can’t make it from scratch, go to your favorite falafel store and ask to buy freshly fried falafel to make your own sandwich.
  • Add condiments to your taste on the sandwich, but don’t skimp on the mint!
