Authentic Guacamole recipe

There are so many Guacamole recipes out there, but an authentic guacamole recipe is priceless! Simple, fresh tasting and luscious!

Ingredients

  • 4 ripe Hass avocados
  • 2 large scallions minced (white and greens)
  • 1/2 bunch fresh cilantro ( about 1 cup) washed
  • 1 lime juiced
  • 1/2 teaspoon kosher salt ( or to your taste)
  • 1 tablespoon extra virgin olive oil ( optional)

Instructions

  1. Use a food processor to make a huge batch in seconds! Start with pulsing the cilantro and scallions only. 

    This tip is to avoid over processing the avocados and ending up with a watery guacamole dip.

    Add the salt.

    Add the lime juice.

    Process until you have chunky looking mixture. It should look as if you chopped them up with a knife, not like a paste. Be careful not to over process here.

    At that point, add in the avocado halves. 

    Use the pulse function and process until you get the desired texture you want and stop right there!

    If you want to make it the chunky one: either pulse the avocados for just three-four times until it breaks down into chunks.

    Alternatively, you can use a mortar and pestle (the authentic way). And start by crushing the scallions, salt, cilantro and lime juice. Then add the avocados and mashed it gently with the cilantro mixture to the desired texture.

    Finish off the guacamole with a topping of spicy jalapeños. 

    If you’re serving this for adults who love the spicy kick, then add the jalapeños to the food processor in the first step along with the scallions and cilantro.

TIPS FOR GUACAMOLE RECIPE

  • The flavor of avocados will depend on the type of avocado you start with. A Hass avocado has more flavor than Florida avocado.
  • The texture of the guacamole is completely your choice.
  • This recipe demonstrates a smooth luscious style guacamole in the food processor.
  • However you can make a chunky guacamole by using a mortar and pestle or mashing the avocado with a fork.
  • For the food processor, make sure that you process all ingredients except the avocados first. That way you don’t end up with over processed guacamole.
  • Make the authentic guacamole recipe to start with using those basic ingredients and then think of add-ons.
  • Don’t add watery ingredients such as tomatoes to the guacamole, except during serving. Add only the amount you’ll need to avoid leftovers.
  • Serve the guacamole with the toppings you prefer (toppings are better than blending everything in).
  • Store leftover guacamole in an airtight container with a layer of water or lemon juice or olive oil covering the entire top.
  • To serve, simply remove that layer of water, olive oil or lemon juice and blend the guacamole using a spoon lightly.
  • Freezing avocados is preferable over freezing guacamole.
  • To freeze guacamole, make sure it’s the basic guacamole recipe shown here without any additions that can go watery after freezing.
