Cool Mint Chia Kiwi Slush

This refreshing Cool Mint Chia Kiwi Slush recipe will keep you cool and happy all summer long! There's no sugar or dairy added to this slush recipe making this a healthy, vegan and low-cal treat for hot summer days!

Ingredients

  • 2 cups very ripe kiwi chunks (about half an inch size)
  • 3 tablespoons fresh orange juice
  • 1 heaping tablespoon of chia seeds (optional)
  • 2 tablespoon mint leaves torn up

Instructions

If using fresh fruit:

  1. Add all the ingredients to a high-speed blender and blend until smooth. Pour the mixture onto a parchment lined 8-inch square pan and freeze for about 2 hours until the texture is not fully hardened or frozen, and not runny or liquid either—just a perfect slush texture. Serve them in kiwi shells or glasses.

If using frozen fruit:

  1. Freeze the kiwi chunks for an hour (or use frozen fruit from your freezer). And adjust the liquid to 1/2 cup to 3/4 cup adding gradually the liquid while blending the frozen fruit until the texture is a perfect slush. Serve.

Recipe Notes

  • Not a fan of kiwi? Substitute them with some frozen mangoes or berries. Melon is another great addition, but really any fruit is fabulous for this healthy slush recipe!
  • For a show-stopping presentation, serve your Mint Chia Kiwi Slush in kiwi shells or glasses.
  • For best results, go for the ripest kiwi fruit you can find.
