Calling all coffee lovers! Here's a Mocha Coffee Pudding recipe with no fuss! It's a perfect treat that tastes like your favorite chilled coffee drink, only in a chilled dessert pudding form. So grab a spoon, kick back and enjoy :

Ingredients

  • 2 cups Iced Coffee ( Mocha or Caramel Macchiato or both!)
  • 1/3 cup cream (or Coconut cream)
  • 2 tablespoons cocoa powder
  • 1/3 cup cornstarch
  • 1 pinch salt

optional:

  • chocolate shavings
  • whipped cream
  • coffee beans
  • Caramel Sauce

Instructions

  1. In a medium pot, add all the ingredients together and whisk until blended (it won’t be smooth yet).
  2. Put the pot over medium heat and cook (stirring often) until the mixture starts to blend in and become smooth. Bring the pudding to a gentle boil and let it cook over low heat (gently simmering) for 3 minutes.

  3. Turn off the heat and pour the pudding into serving cups.
  4. Chill the pudding for 3 hours at least or flash freeze it for 1 hour, and serve!
  5. Enjoy as it is or with your favorite toppings (optional)

Recipe Notes

  • You can use store-bought or homemade iced coffee for this recipe. 
  • Make this coffee pudding recipe sugar-free by using homemade iced coffee and using stevia to sweeten it.
  • For a vegan coffee pudding, use coconut milk for your iced coffee and coconut cream instead of cream.
