Ingredients

  • Baked Fish:
  • 4 pieces of Tilapia loins (any type of fish fillet works here!)
  • 1/8 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 teaspoon of olive oil
  • Dill Cherry Salsa:
  • 1/2 cup of chipped fresh pitted cherries
  • 2 tablespoons of capers
  • 2 tablespoon of chopped pitted green olives
  • 1/4 cup of minced dill
  • 1 tablespoon of minced parsley
  • Juice of 1 lemon
  • 1 tablespoon of honey
  • pinch of salt
  • pinch of red pepper flakes (optional)
  • 1/4 cup of olive oil (more or less depending on how lose or thick you prefer your salsa to be)

Instructions

  1. Preheat the oven to 450 degrees.
  2. Place the tilapia loins on a parchment lined baking sheet and season with salt, pepper and olive oil. Toss the fish well and bake in the oven for 10-14 minutes until done (depending on the size of your fish).
  3. In the meantime, make the salsa. In a bowl, add all the ingredients together and mix well. Taste and adjust seasoning.
  4. To make the cauliflower rice, follow the recipe in this Lemon Cauliflower Rice Salad with Yogurt Dressing.
  5. Once the fish is baked and ready, and while it’s still piping hot, drizzle the salsa on top. Enjoy :)
