Well it’s finally here—the long awaited beautiful season of Spring! And you know what that means—it’s strawberries galore! Just the sight of strawberries everywhere, the smell of strawberries , the sweetness of strawberries, and the many many many recipes to make with strawberries…So while this recipe doesn’t need fresh strawberries, it still feels like I am doing strawberries some justice.
These little cute strawberry brie lollipop pies are really the perfect appetizer and the best “I love you” to mom! they come together in a snap if you have the easy flakey pie dough already prepared ( strongly recommended) or if you chose to use store bought puff pastry. If you’re making it all at the same time, it would take just 50 minutes more preparing the dough and waiting for it to chill. Again, I should stress that both options work just as fine.
This is how easy it comes together: the easy flakey pie dough is rolled, and cut up using a heart cookie cutter. A lollipop stick is pressed into the heart dough and then a slice of brie is placed at the centre of the heart. A little bit of strawberry jam tops the cheese and another heart dough covers it up. The mini pies are sealed with a fork, brushed with an egg glaze and baked for 15 minutes! Perfect flakey layers of crispy buttery (well not that buttery) pies filled with creamy brie and strawberry sweetness, with a hint of thyme! How else can you make your day happier ?:)
I first made this recipe about 3 years ago in a romantic dinner themed cooking class, and I made it using brie and apricot jam which was really fabulous too! After that I once made it for a friends’ party and didn’t have any lollipop sticks handy, so I cut them up into squares and used marmalade jam—again fabulous! So what I’m trying to say is, the variations are endless on this recipe! From shapes, filling combinations, flavoring the easy flakey pie dough (adding different fresh herbs to it) and even to the egg wash—I always add a fresh herb to it, so feel free to play around with that too!!

Strawberry Brie Lollipop Pies
The best way to say Happy Mother’s Day is with this strawberry brie lollipop pies recipe. It will also make you the next foodie star at any gathering! Easy flakey pie dough cut up into hearts, filled with creamy brie cheese and a dollop of strawberry jam, baked till crispy golden layers of divine mini strawberry brie pies, and a cute lollipop stick to make this the perfect finger food experience!
Ingredients
- 1 batch of easy flakey pie dough with 1 tablespoon of fresh minced thyme added into the flour mixture.
- 1/2 cup of brie cheese cut up into 1 inch squares and 1/4 inch thickness ( about 10 pieces)
- 1/4 cup of strawberry jam
- 1 egg beaten with 1 teaspoon of thyme leaves and 1 teaspoon of milk
Instructions
- Preheat the oven to 420 F.
- Roll out the chilled dough into 1/8th of an inch thickness and use a heart shaped cookie cutter to cut out about 20 hearts of dough.
- Place 10 of the heart doughs on a parchment lined baking sheet and take 1 lollipop stick and stick it at the bottom of each heart and press it down firmly so that it sticks well to the dough.
- Place a slice of brie cheese at the centre of each heart dough and top that with a teaspoon of strawberry jam in each heart.
- Cover each piece of strawberry-brie heart dough with another heart dough and press firmly with your fingers around the edges.
- Using a fork, seal the heart pies well all around the edges.
- Brush the pies with a thin layer of egg wash and bake right away.
- Bake the pies for 20 minutes (depending on the size of your pies) until golden and crispy.
- Let them cool for 1 minute on the tray and then cool them on a wire rack for 2 more minutes.
- Note:
- -Do not over fill the mini pies because the filling will leak out.
- -Do not eat the pies right away from the oven because the filling will be too hot.
