Today I’m sharing plenty of good stuff. Basically it’s all about a Pizza night, but not your average one. A Mango Salad dressing with Salad Sticks for a Pizza Night, which happens to be the only way to get my picky little one to consider eating salad.
But along the way leading up to this one of a kind pizza night, I’ll walk you through all the craziness of my day and how a divine meal like this washes all the madness away! 🙂
This could be one of my most special posts on the blog. It’s almost as if I’ve waited for so long to write this post and for some reason, I’m only writing it today. Today’s the day. The day I open up about how I wake up at 5 a.m and begin the running around, dropping off, working, picking up, and just when you thought it ends there, I’l say wait there’s more. There’s another round of dropping, cheering, picking up, bathing, dinner and finally bed time!
The mango salad dressing here is like icing on the cake, and the pizza night is like my savior! Since dinner time is not just the end of the day, it should also be the most relaxing time of the day. Should be. Time after time I find myself rushing to Walmart, and can I just add–not only does Walmart save the day when I pick up my favorite Red Baron Pizza, it also saves the day because kids will never fail to find a tiny thing here and there to hold on to while I finish off my shopping. That’s a win win for me 🙂
Ok, moment of truth. Before I had kids, I thought motherhood would be a series of hugs, kisses, smiles and cute giggles. Truthfully, the first few months included plenty of sweetness like that. However, the sleep deprivation, struggle with feeding, tummy aches and diaper mess took away a chunk of that. Funny enough I thought that would be the hardest part, and sooner my kids would be independent and all grown up.
A couple years later and I would be that mom who’s practically sitting down on the floor in the middle of the mall or a grocery store for nearly an hour trying to figure out what on earth my girl is trying to tell me. A couple more years later and I would be the mom running around from arts to sports to all sorts of activities. A couple more years later and I’m that mom who negotiates TV time, food choices, selection of words, acts of kindness and more serious stuff. But with all the serious stuff, I’m also the type of mom who handles plenty of drama!
Yes, that’s why a pizza night with these salad sticks and luscious mango dressing for dinner is like a dream come true 🙂 Since I have 2 girls, I have to say I go through a lot of negotiations on a daily basis. A lot. Not just your average why and how come, rather for example, we negotiate intricate details of a design on a dress to disregard it forever. Even if I put so many hours at malls to look and buy that amazing dress. We also negotiate recipe details and steps before my picky eater decides if she may taste or not. Thanks to the Red Baron pizza, we end up having a relaxing meal, a fun salad stick and a smooth basil mango dressing to dip in and laugh each time a piece of salad falls into the dressing 🙂
The truth is, with all my running around beginning with teeth brushing, the drama and dilemma of what to have for breakfast. Every single day. Then comes the lunch box prep and the negotiating of why this item and not that. Finally time to get dressed for school or camp. Oh yes more drama of what to wear and why to wear, and the concept of respecting the weather–yes if it’s a rainy day we need to respect that and put on rain boots. Just because. Dropping off to school with a big kiss, I take a big breath and then I feel like I miss them already lol
I run to work and run on coffee to disconnect from the morning hours and stay focused. Probably the one thing I need by the end of the day is to run home and throw myself in the bath tub. But instead I excite myself for pick up and activity time, I meet the girls with the biggest hugs. I seriously miss them every day. Two seconds later, I start listening to the drama between their friends, who’s friends with who and who’s not friends with who, who pushed who and who ate what.
I wait at the activities, cheer on them, and start drifting what to make for dinner. Many things come to mind, but just imagining how I’m going to convince my picky little Miss J. to eat this or that starts to stress my out. And it’s end of the day, I definitely don’t need to stress. I need to relax, get the kids involved in our dinner fun, sit down and laugh about our day. Pizza night swoops in and saves my life. Salad sticks happen to be the only way my picky one would eat a salad. But oh wait a dip is not what puts a smile on our face. A sweet mango dressing does 🙂
First of, I preheat the oven. Girls start unwrapping the Red Baron pizza and placing it on a baking sheet. I take out my favorite fruits, veggies and cheeses and cut it into chinks for the salad and start skewering. Peaches, strawberries, berries, apples, cucumbers, tomatoes and bocconcini–anything you have in the fridge works!. I usually have my mango dressing in the fridge and just pour it in a dipping plate. Get the pizza in the oven, 10 mins later–YES! everyone’s favorite dinner is on the table!
I make my mango dressing by pureeing fresh mango (frozen and thawed works too!), scallions, basil, a squirt of lime, pinch of salt and olive oil. Just like that and it’s a divine dressing for your salads, dip, sauce for your sandwiches and grilled goodies!
Now it’s food time, and it’s fun time! We compare each salad skewer and laugh when we drop a chunk of fruit in the mango dressing. We ooh and an with every cheesy slice of pizza. At that point we ALL had a long day and we’re all tired. Really tired. So we chill 🙂 If I’m having a playdate–this pizza night menu is my go to choice too. If moms are free we have a double playdate, kids and their salad sticks, moms with their drinks and salad sticks too! 🙂
Mango Salad Dressing with Salad Sticks for Pizza Night
- 1-2 Red Baron Pizza from the freezer isle at your local Walmart--chose your favorite toppings and crust!
- A combination of chopped fruits veggies and cheese, skewered (apples, peaches, strawberries, blueberries, bocconcini cheese, ice burg lettuce, cucumbers, tomatoes, avocado, etc)
Mango Salad dressing:
- 1 large rip mango peeled and chopped into chunks (frozen and thawed mango works too)
- 2 tablespoons of fresh basil leavs
- 1 scallion chopped
- pinch of salt
- juice of half a lemon/lime
- 1/4 cup of olive oil
Preheat your oven and prepare a baking sheet lined with parchment paper. Unwrap the pizza from the box and plastic wrap, and place it over the parchment lined baking sheet.
When the oven is ready, bake the pizza for 8-10 minutes until the cheese is bubbly.
In the meantime, skewer your chopped fruits and veggies in any order you prefer and make the skewers as different as possible so it's more fun and tempting to try more.
To make the dressing: puree all ingredients in a food processor until smooth. Pour some of the dressing in a dip plate and serve it with the salad skewers. Enjoy! 🙂
