Swap your average salad with this healthy kale Greek salad recipe. Loaded up with extra fibre, iron and protein and an extra shot of flavor from the kale . A little bitterness which is perfectly balanced by sweet apples, a delicate saltiness from the feta and Kalamata olives, all tossed with tomatoes, cucumbers, red onions and fresh oregano leaves.
I love Greek salad, Greek food, Greek many things..And if you know me at all, you’ll know that I absolutely love love kale. So why not combine those two together? I know kale has a slight bitter after note—one I really prefer, but I know some who don’t. So this is perfectly balanced with the addition of sliced apples to the salad and my honey Greek salad dressing!
And I love adding fresh oregano leaves to the salad just to bring out the brightness and freshness in the oregano which is the base flavor in many Greek foods, including this salad. At that point, I stick to the basic cucumber, tomatoes, red onions, Kalamata olives and feta cheese to finish it off.
And I can’t let this go without mentioning the gorgeous set of fork and spoon you see there—I got them from Budapest about 6 years ago. They have beautiful hand crafted serve ware and tablecloths with very unique Bulgarian patterns. If you visit neighbouring cities like Prague or Bratislava, you’ll find the same beautiful hand crafts but each country has it’s own unique pattern and apparently only a local could tell which one belongs to which country. I personally found them all gorgeous!

Healthy Kale Greek Salad
Swap your average salad with this healthy kale Greek salad recipe. Loaded up with extra fibre, iron and protein and an extra shot of flavor from the kale.
- 2 cups of fresh kale leaves , stems removed and roughly chopped
- 1/2 a red onion , sliced
- 1/2 a cucumber , sliced
- 1 cup of cherry tomatoes
- 1 gala apple ( or your favorite) , cored, cut in half and thinly sliced
- 1/4 cup of pitted Kalamata olives
- 1/2 cup of feta cheese , cubed or crumbled (your favorite)
- 2 Tablespoons of fresh Oregano leaves , roughly chopped
- 1/4 cup of honey Greek salad dressing.
Put all the ingredients in a large bowl.
Drizzle with this perfect honey Greek salad dressing.
