There’s something so incredibly satisfying about buying a new phone. And I know I’m not the only one when I say this, but my phone is like my best friend. It’s got all my work, my photos, my social media, my friends, my reminders, my schedule, my music, and even my secrets!
I’ll have to say that my phone is not just like my best friend, it’s also my kids’ favorite friend! Why. Why can’t I have one thing that’s just for ME?! Year after year, no matter how many electronics these kids have, they always end up fighting over mommy’s phone. Why?!
So all this excitement buying my new GS8 Unlocked, yes Unlocked, means more to me than just an amazing phone. You guys know how my family (and my life!) is scattered miles and miles apart, actually continents apart! So for years I’ve been tied to contracts and would have a phobia each time I open my phone bill. Every single month.
No matter how unfair it is, you know you’ll end up paying it. So I did. This Samsung GS8 which I bought online from Walmart is Unlocked. To me, this means I can pick more than just a smartphone, I can rather pick a carrier, data plan, services, features and apps, and get my phone exactly the way I want it. (more on that below!)
Now I can’t wait to go back n forth to Vienna visit my family, Miami, Turkey, Canada, anywhere!! But wait, there’s more for me than that. Hello Goat cheese garlic bread. Have you guys noticed how reluctant I’ve been about food videos? I’ve noticed the crazy hype and I’ve wanted to jump on the wagon for so long, however the process of adjusting my DSLR settings, lighting, focal points, etc..drives me crazy! CRAZY! So the first thing I wanted to do with my new GS8 is making a food video! Goat cheese garlic bread with slices of peach, strawberries, all wrapped up and baked for 15 minutes until the cheese is melted..Probably better than a chocolate cake for me right now!
So have a look at this video–unfiltered. This is absolutely awesome video quality without any fancy set up. Just click record and GO. I used a mini tripod to help me out and it seems like it worked perfectly. Another thing you can do if you want a bigger tripod is, simply buy a tiny smart phone tripod attachment. I can’t tell you how much I actually ENJOYED making this video and it didn’t feel a single bit like a stressful task! So Stay tuned for more video deliciousness coming your way!!

Another thing I’m loving about my phone is my calendar–like all of us! I lay out my posts, appointments, meetings, to-do’s and everything. Now unlike all of us, I have an on again off again relationship with social media. Often times, I use it to stay connected, check out awesome things, like, comment and engage. However, often times it can feel more like “work” than fun. Times where I have to be sharing something, updating something, scheduling something and so on. These are times when you need a sleek, fast processor and light weight phone like this GS8!
Back for a minute to the goat cheese garlic bread recipe. If you need extra tips about making perfect garlic bread, I wrote a chunk of details about it in this Ultimate Garlic Bread post. The basic rules are–the type of bread you start with will define the final crust, crisp and texture of the garlic bread. So a nice soft loaf like the one I used today, will give you a nice soft fluffy garlic bread. However a crispy baguette with a perfect crust will also give you a nice crusty garlic garlic bread.
The fruits here are totally optional. For me they’re seasonal, sweet and add a perfect contrast to the flavor of goat cheese, garlic and bread! The herb I used here is fresh thyme (skip that or use Parsley, or any other herb you prefer). Basically you’ll be layering bread, goat cheese, sliced fruit, shredded mozzarella and repeat. Wrap and bake. Pull apart and ENJOY!

I stretched it for you guys to see how far it can go and it is fascinating! I can hang out all day with this phone and never get enough exploring it!
Some extra things to know is that my new GS8 happens to be water resistant. Thank YOU. Now I don’t have to lose my mind every time one of the girls wants to hold my phone with her wet hands coming out of the pool. It charges super fast (another win win for crazy busy moms like me). Frankly I’ve always been a Samsung person, I’ve started off with the note since I fell in love with that extra huge screen back when it was only exclusive to Samsung. And while that was the main reason I started my affair with Samsung, I have to admit it lasted forever because of how happy I was with every Samsung Phone.
However, I’m now loving my GS8 even though there’s the bigger screen GS8+(plus). Fruity Goat Cheese Garlic Bread Shot With My New Phone
Ingredients
- 1 loaf of Italian soft bread sliced into half inch slices
- 1 cup of goat cheese
- 1 tablespoon of fresh thyme leaves
- 1 garlic clove minced
- 1 large peach thinly sliced
- 1/2 cup of sliced strawberries
- 1 cup of shredded mozzarella cheese
Instructions

Preheat the oven to 375 F.
In a small bowl mix the goat cheese, thyme and garlic. Season with a pinch of salt.
Take your loaf and slice it into half an inch slices. Start layering the bread by taking one slice of bread, spread a teaspoon of the goat cheese mix, sprinkle some mozzarella cheese over the slice, and then add some peach slices. Add another slice of bread over the peaches, repeat with the goat cheese, mozzarella and now add strawberries. top that with another slice of bread and repeat, alternating peaches and strawberries.
Press the loaf together to form its' original shape as best as you can and wrap it in parchment paper. Place the wrapped bread over a baking sheet and bake for 18-22 minutes.
Remove the bread from the oven and unwrap the paper. Pull apart a slice of garlic bread at a time and enjoy 🙂
