Today’s post is barely a recipe. It’s just a bowl of goodness. Anything that makes you feel good works here. Anything. It’s a big bowl of winter fruits, some chickpeas, spinach, avocados and a sweet orange dressing. Sometimes that’s all you need on winter nights to make them feel a bit more easier. So these easy Winter Goodness Bowls post is just an inspiration for you to grab some goodness and enjoy a bowl of them too!
I’ve gathered these winter goodness bowls one really cold day. It was rather Fall and not even winter. But it was really cold. While I LOVE Fall madly, I get a bit of winter phobia when a grey cold day kicks in all of a sudden. And while it’s the obvious thing to happen, I don’t know why I don’t do well with that. What I know is that they put me in a happy place. As the winter stars to kick in and the New Year, these winter goodness bowls keep making their way back more and more.
Is it really the end of the year!?! I almost feel that way every single year around December. And I’m always just as surprised! lol It’s funny sometimes I feel blessed the year is over. Blessed for everything I had, and blessed the year went by with no tragedies. At the same time, sometimes I feel I want the year to start over so I can make the most of it. Enjoy every blessing a bit more, breathe every relief a bit harder and use time a bit better. Crazy.
While everyone has a list of resolutions by now, I’ll admit I don’t do any of those. I think it puts pressure on me and you don’t want to rely on me when I’m under pressure lol I’m NOT one of those who deliver under pressure. I probably do just the opposite! So that’s that. In my mind I have many goals, dreams, aspirations and lessons learned that I love to carry on for 2018. One of them would be to reconnect back to the person I used to be a LONG time ago, before life took over my life! lol I’ll maybe start with something as simple as, breathe more and think less!
Before getting carried away, back to my winter goodness bowls please! I’ve got sweet gorgeous persimmons (I’ll be missing those babies till next November!), my favorite sweet figs and pomegranate arils which I put side by side with some sliced apples, avocados, spinach and chickpeas. Add orange segments, kale, white beans, some cooked grain, roast veggies if you’re in the mood for that too 🙂
Also something like chicken, shrimp or meatballs would boost up your protein here if you feel like it. My winter goodness bowls are always vegetarian and today they’re completely vegan too. I prefer that clean, light and fresh feel to them. for today’s dressing, I used a simple orange vinaigrette which I’ve used before in this Orange Lentil Greek Salad (minus the black olives, a few other tweaks) and it turned out perfect!
However, a perfect tahini sauce drizzle here would be my pick if I needed something a touch more filling like this Lentil Fall Harvest Buddha Bowl. The best things about winter goodness bowls is that they’re NOT meant to be complicated or regulated lol So feel free to use a balsamic, Asian, mango or any dressing that you feel will put that smile on your face! Easy Winter Goodness Bowls
Winter Goodness Bowls:
- 2 cups of spinach
- 1 apple sliced
- 1 persimmon thinly sliced
- 5 figs quartered
- 1 cup of pomegranate arils
- 2 avocados sliced
- 2 cups of chickpeas
- 1 teaspoon of mustard
- pinch of salt
- 1/2 teaspoon of dried oregano
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of lemon juice
- 1 tablespoons of orange juice
- 2 tablespoons of orange marmalade
- 1/4 cup of olive oil
- Assemble your bowls by arranging the ingredients between two different bowls.
- Make the dressing by mixing all ingredients in a container with a lid. Seal the lid and shake the container vigorously until all dressing is blended together. Pour over the bowls and serve! Enjoy 🙂
