Ingredients

  • 2 whole artichokes (frozen or canned)
  • 1 cup of fresh kale , roughly chopped
  • 2 tablespoons of parsley
  • 1 large garlic clove
  • 1 teaspoon of lemon juice
  • 2 tablespoons of walnut pieces
  • 1/4 teaspoon of salt (or to taste)
  • 1/4 teaspoon of freshly cracked black pepper (or to taste)
  • pinch of red pepper flakes (more or less to taste)
  • 1/4 cup of extra virgin olive oil

Instructions

  1. Place all the ingredients in a food processor and pulse into a pesto.
  2. Store in the fridge for up to 2 weeks.
