There are so many Guacamole recipes out there, but an authentic guacamole recipe is priceless! Simple, fresh tasting and luscious!
Use a food processor to make a huge batch in seconds! Start with pulsing the cilantro and scallions only.
This tip is to avoid over processing the avocados and ending up with a watery guacamole dip.
Add the salt.
Add the lime juice.
Process until you have chunky looking mixture. It should look as if you chopped them up with a knife, not like a paste. Be careful not to over process here.
At that point, add in the avocado halves.
Use the pulse function and process until you get the desired texture you want and stop right there!
If you want to make it the chunky one: either pulse the avocados for just three-four times until it breaks down into chunks.
Alternatively, you can use a mortar and pestle (the authentic way). And start by crushing the scallions, salt, cilantro and lime juice. Then add the avocados and mashed it gently with the cilantro mixture to the desired texture.
Finish off the guacamole with a topping of spicy jalapeños.
